Conventional wisdom is that you should never cook with "cooking wine". Just go out and get a bottle of Sauternes and be done with it. I think the distinction you are making is between brands. You need to find a wine that you can drink, and then cook with it. If you have alcohol issues, most of it evaporates during cooking

Holland House Cooking Wine is GARBAGE. It's substandard wine to which salt is added. A good rule of thumb for cooking is never use a wine you woudn't drink.

Nothing, I use my wine that I drink to cook. It's all about quality.
