Katybeth I think that you will find your example is actually 6:1 which when added together gives you your 7 participants. If the Odds are 7:1 you will have a payout of 7 x your stake plus your stake back.
I've been a casino manager for 20 years.

You will get $700 total which included your original $100. Think about it like this, if you and 6 friends made a bet and all put up $100 then the pot is $700 and your odds are 7:1 that you could win. If you won, you would get the whole $700 which included your $$. Good luck with the bet.

Depends on the game.
Lottery ticket for $1 paying $7 nets you $6. (Or convert to 100's if you want.)
Craps with 7x odds pays the $7 plus you keep your original $1.

The $700 includes your original bet. So you do not get $800.
