You are making a LOT of assumptions here yourself.
First of all, how do you know that God is a Him? Because of what the bible says? I don't think God has any gender at all, because I don't think God is a being, but rather the energy source of life.
Next, how can you make a blanket statement saying that no one has ever had a one on one conversation with God. You have no more knowledge of this than anyone giving a second hand account of such a conversation. The only ones who could possibly know this for sure are God and the person who claims they had the conversation and any eye witnesses.
I think that ALL Holy texts are indeed God-inspired, but that everything has to be taken in context. Keeping in mind that all of these "inspirations" are coloured by the human filters that they came through as well as the times they were written in. These men had certain beliefs that no longer carry weight in this day and age (ie: slavery is normal, woman are not people, etc. etc) that colour all of their writings. They were imperfect filters, but that doesn't mean that they did not receive inspiration from God. Inspiration also doesn't have to come in the form of a one on one conversation. I believe that God is somewhat more subtle and has many more resources available than just words. I like to think that God is far more powerful than we can EVER conceive of. The thing about faith is...proof is irrelevant!

Moses had a conversation with God and the 10 commandments were written by Him. God inspired men to write the Bible. Why even ask the question if you're closed minded?

First of all people have seen God, had one-on-one conversations with Him, and He did inspire men to write the Bible. Meaning He gave them the words to write. How else can you explain the fact that more than 40 authors, who wrote during a period of about 1600 years, compiling a book that is unified in spirit?
Deuteronomy 10:4 (Moses speaking) "The LORD wrote on these tablets what he had written before, the Ten Commandments he had proclaimed to you on the mountain, out of the fire, on the day of the assembly. And the LORD gave them to me".
Genesis 32:30 So Jacob called the place Peniel, [Peniel means face of God] saying, "It is because I saw God face to face, and yet my life was spared."
Exodus 24:9 Moses and Aaron, Nadab and Abihu, and the seventy elders of Israel went up and saw the God of Israel.
Exodus 33:11 The LORD would speak to Moses face to face, as one speaks to a friend. Then Moses would return to the camp, but his young aide Joshua son of Nun did not leave the tent.
To get to your question: All of the Bible is the truth. God used human beings to physically pen the biblical text. But remember God is the author, they are His words. The Bible is inspired by God. The Old Testament was originally written in Hebrew. The New Testament was originally written in Greek (with a few portions in aramaic). Learn those languages so you can read it for yourself in it's original. Check out some good commentaries (NIV Application commentary, Anchor Bible Commentary, New International Commentary on the New Testament (also one on OT), New International Greek Testament Commentary).
The Bible is inerrant and infallible. Inerrant means it is incapable of having errors, and infallible means incapable of being false. So this means that God protected the Bible while it was being translated to other languages and other translations.

Inspiration doesn't mean the biblical writer just felt enthusiastic, like the composer of "The Star-Spangled Banner." Nor does it mean the writings are necessarily inspiring to read, like an uplifting poem. The biblical Greek word for INSPIRATION litterally means "God breathed." Because Scripture is breathed out by God - because it ORIGINATES from Him - it is true and inerrant.
Biblical inspiration may be defined as God's superintending of the human authors so that, using their own individual personalities - and even their writing styles - they composed and recorded WITHOUR ERROR His revelation to humankind in the words of the original autographs. In other words, the original documents of the Bible were written by men, who though permitted to exercise their own personalities and literary talents, wrote under the control and guidance of the Holy Spirit, the result being a perfect and errorless recording of the exact message God desired to give to man.
Hence, the writers of Scripture were not mere writing machines. God did not use them like keys on a typewriter to mechanically reproduce His message. Nor did He dictate the words, page by page. The biblical evidence makes it clear that each writer had a style of his own. (Isaiah had a powerful literary style; Jeremiah had a mournful tone; Luke's style had medical overtones; and John was very simple in his approach.) The Holy Spirit infallibly worked through each of these writers, through their individual styles, to inerrantly communicat His message to humankind.

2 Timothy 3:15-17
15and how from infancy you have known the holy Scriptures, which are able to make you wise for salvation through faith in Christ Jesus. 16All Scripture is God-breathed and is useful for teaching, rebuking, correcting and training in righteousness, 17so that the man of God may be thoroughly equipped for every good work.
2 Peter 1:21
For no prophecy was ever produced by the will of man, but men spoke from God as they were carried along by the Holy Spirit.
--It is INDEED the word of God....
“For the word of God is living and active. Sharper than any double-edged sword, it penetrates even to dividing soul and spirit, joints and marrow; it judges the thoughts and attitudes of the heart.”- Hebrews 4:12

The bible is just a book of a bunch of hear say it's not like the bible came in one whole written by one person..it came from stories told by many people...imagine if you had 8 people sit in a circle, one person told the person sitting next to them for example"the white wolf ran south to it's prey" then the story continued to get passed along to the people in the circle, when it finally reaches the original person who told the story it is a guarantee that the story has changed atleast 4 times same as with the bible so who's to say the bible and all of it's content is fact or fiction, there are many discrepencies in the bible if you read what is written instead of what it means...nobody in the bible has their story straight...so basically the first is just a book of stories told by many people long time ago.

Question Concerning the Bible? If I were paralyzed and couldn't write, but wanted to write a book, So I asked you to write it for me as I told you what to write (and of course you agreed). Who would be the Author of that book? (You were just a vessel I used to get those words on paper...those words came from my thoughts, right?).

On what basis do you contend there is no proof? Have you read the Bible in its entirety? If not, how can you have such a strong opinion about a book you have never read? And if you have read it, how can you have failed to see the proof of its divine inspiration?
