Sorry if this is stupid and gross...

If I have bowel movements that are relatively normal but sometimes come out thinner or flatter (I have mild IBS), is this diarrhea? Or is diarrhea much more obvious and uncontrolled?

Diarrhea is uncontrollable and is more watery then normal bowels. I think that you flatter thinner bowels are changing because of what you eat. Good Luck with that

True diarrhea is watery. Even if the bowel movement is very thin, as long as it is not watery, it is considered a normal bowel movement. It's nothing to worry about. You might be eating a lot of fiber or drinking a lot of water. It is healthy to have easy bowel movements.
