hey there, my bfs birthday's in a couple of days, and he's preparing a brunch with his mom, i said that i'd love to help and he mentioned that i could fix myself something......

thought about a salad or....i dont know....
any idea ????

since they will be making the main meal make some really delectible sides like stuffed mushrooms or stuffed jalepanos (my personal fav but only stuffed with cream cheese not cheddar) maybe some asparagus wrapped in bacon or even something simple and hard to mess up like deviled eggs.......maybe make champagne punch take care of the drink part.

How about a shrimp and pea salad? no fuss, easy and delicious...
Shrimp and Pea Salad--
1 lb frozen cooked large cleaned peeled shrimp (21-30)
2 c frozen peas
6 c Boston lettuce leaves
1/2 c thinly sliced red onion
1/4 c ranch dressing

Place shrimp and peas in colander; rinse under hot water until thawed. Drain well. Place in large bowl; set aside. Arrange lettuce leaves on 4 plates to resemble cups. Add onions and dressing to shrimp mixture; toss lightly. Spoon into lettuce cups.

Or maybe some Baked Stuffed Mushrooms (again easy but yummo)

Baked Stuffed Mushroom

8-10 large fresh mushrooms
1 can of crab meat (drained)
1-2 tblsp mayonnaise
1/4 cup (or so) shredded swiss cheese

Cut the stems of the mushrooms and scoop out the centres.
Finely chop stems and centres. Combine the crab meat
and mayo (as you would for tuna salad).
Add whatever seasonings you like (I use "Pinch of Herbs")
to taste. Add in chopped stems and centres. Add in cheese.
Stuff into mushroom cups and place under the broiler
for 5-7 minutes.

Or super impress them with these, perfect for a brunch!

Orange Glazed Blueberry Scones-
2 c flour
1/3 c sugar
1 tsp salt
1 tsp baking powder
1/4 c cold butter
1 egg
3/4 c buttermilk
1/2-1 c blueberries

Sift flour, sugar, salt, and baking powder. Place in mixer. Add butter. In another bowl, wisk egg and buttermilk. Pour into flour while mixing. Do not overmix! Mix berries with a little bit of flour and mix into batter. Stir carefully. Drop scoops onto pan, Bake at 400 for 15 min. After cooling, drizzle with orange glaze.

Orange Glaze-
2 c powdered sugar
2 TBS butter
juice from 2 oranges

Mix and heat. Let cool before drizzling over Blueberry scones.

You really cant go wrong with a potatoe salad heres one of my favorites...

Garlic Potato Salad with Homemade Mayonnaise

For garlic mayonnaise:
2 eggs
Pinch of salt
1/4 tsp dry mustard
dash of paprika
4 Tbsp. lemon juice
1 1/2 cups olive oil
1/2 head roasted garlic
For salad:
3 lbs. russet potatoes
6 hard-boiled eggs
1/2 medium red onion, minced
Salt and pepper to taste
1/4 cup dried dill
1/4 cup regular mustard


To make the garlic mayonnaise, place all ingredients except oil in blender. Blend on high until all ingredients are well blended. Add the oil in a slow steady stream. If the mayo is too thick add a few drops of lemon juice. (The extra mayo can be kept in the refrigerator for up to a week. It's great on sandwiches and in chicken salad.)
For the salad, cook the potatoes in a pressure cooker for 10-15 minutes, depending on the size of potatoes. Boil eggs for 10 minutes. After both have cooled, peel, dice and add to bowl. Add the onions and then salt and pepper to taste. Add dill, mustard and mayo to the consistency that you like--some people like their potato salad dry, some like it very moist. Refrigerate overnight for best flavor.

Brunch, so your looking at late-morning / early-afternoon...
Well you could always go with a dessert and make a cookie/brownie tray...
If you want something with a little more substance, why not make Swedish meatballs or a pasta salad
you could make a nice fruit salad and include a raspberry dip for the fruit...
There are so many choices...
If my ideas don't work just go to http://www.foodtv.com
and do a search for some finger foods or easy dishes...

How about making a sorbet or a desert like dish. Or make a fruit salad someone else may have already made the green salad

maybe a fruit salad??
combine some strawberries, sliced kiwi, sliced starfruit, melon balls, blueberries and place them in a hollow melon half. try to give the circumference of the melon half some jagged edges.
if it's an adult party add a little evrclear, i always make this for picnics. or maybe a mosaic gelatin dessert. prepare oe package of each: grape jello, cherry jello, lime jello, and orange jello. get some of the white milk jello, put into a glass pan while it is still liquidy, and cut up other flavored jellos into pieces and stir into milk jello. place in fridge and chill until firm.

You can make a fruit platter or a cheese platter. There are many types of tropical fruits that you can buy and put together. With the cheese you can get many types to put on a platter with grapes and baguette bread, you can even look up on the Internet what type of wines would go with these two types of platter to put with them. "Brunch Quiche" - 10 to 12 servings

2 cups uncooked elbow macaroni
6-8 slices bacon; chopped
2 cups shredded American cheese
2 cups shredded Monterey Jack cheese
2 cups soft bread crumbs
1 medium onion; finely chopped
1 small green bell pepper; finely chopped
4 eggs; separated
2 cups milk
1 tsp. salt
6-8 drops bottled hot pepper sauce
Red salsa (optional)

Prepare macaroni according to package directions; drain. In medium skillet, cook bacon until crisp; drain. In large bowl, combine macaroni, bacon, cheeses, bread crumbs, onion and green pepper. In medium bowl, beat together egg yolks, milk, salt and hot pepper sauce; add to macaroni mixture and mix well. In large bowl, beat egg whites until stiff; fold into macaroni mixture. Pour into buttered 12" quiche dish or 13x9" baking dish. Place a shallow baking dish with 1-2" water on lowest rack of 325* oven; place quiche on center rack. Bake until set and knife inserted in center comes out clean, about 1 hour. Let stand 5 minutes before cutting. Serve with salsa. Refrigerate leftovers.
