Usually a gape means the feeding reflex in baby perching birds. They'll open their mouths wide and beg for food, almost tripping their parents for dinner. However, there's a disease in Turkeys called Gape worm where worms attach themselves to the back of the throat and the poor bird has trouble breathing and eating.

The gape is the corners of the mouth. It's shown well in this photo of a Ferruginous Hawk, see the yellow that extends under the eye?

I'll assume you're talking about turkeys...Gapes is a disease turkeys can get from gape worms. Or there's the gape of it's mouth...how far an animal can open its mouth.

the gape of a bird is it's mouth, it is also the term used if a hunting falcon starts to pant, showing it is tired.
