Wether you use a stove top or grill use my tried and true formula 2, 2, 4, 4. First make sure that the pan/grill is hot if using a pan sear the steak on each side 2 minutes at high temp then 4 minutes per side on low temp. If using a grill separate the coals into two mounds one high and one low then sear the steak 2 minutes per sinde on the high side then 4 minutes per side on the low side. This makes for a perfect medium steak - if the beef is of good quality there is no nead to tenderize.
For chicken it will depend on the side of the bird - if a boneless breast is what you are cooking saute or grill the breast (rub a good quality oil Olive preferred over the breast) sear the breast on both sides approx 2 minutes until you get a light brown crust then put in oven at 350 F for approx 25 minutes it should be firm to the touch. On a grill use the low side of the fire and the same way the next step must be watched or you will get a very dry piece of chicken - use the press test ie use your finger or if you a afraid of burning the back side of a spoon an apply pressure to the breast it should have some resistance and not soft. In either case all you really need is salt a pepper so as to not mask the flavor of the product. You can always use a sauce to dip or coat after it is finished.

The best way to cook any kind of meat is on the grill. It's almost a crime to pan fry a steak but sometimes you have to do what you have to do. There are lots of marinades in the stores that just take 1/2 hour at the most or less. Beating the heck out of your chicken or steak will make it tender. Use meat tenderizer and beat it up.

For outside grill (since that was added to your question and is the absolute best way to cook a steak).........put the charcoal in the belly of the grill. Pour lighter fluid on it. Light. When the coals are white and hot, put the steak on. Cook according to your tastes.

If you CANNOT use the grill.......do the broiler on the oven, but WATCH it. It will dry out very quickly if you aren't careful.

Now, I'm hungry for a steak!

first of all u don't tenderize a t-bone. I have found that the best thing to season meat with is Louisiana Marinade. You can only get it at the dollar store. It works on every kind of meat. Then just use a baking pan line it with foil, put the meat in the pan cover with foil and bake at 450F till done. It bakes chicken quicker and keep an eye on those steaks. 400F if u have a gas stove.

You can cook the steak by frying it in a pan, or under the broiler. Tenderize the steak by pounding or marinating. It should be illegal to cook a steak on the stove, but you have to make do with what you have.

you can tenderize the toughest steak with lemon juice ( from a real lemon ) - just slice the lemon and rub it on both sides let it set 15-20 mins. no you can't taste it.
also if you fry a steak on the stove only turn it 1 time to much turning makes them tough
after you turn the steak put a little ice on it and a lid - helps keep them super tender.
also do not salt before cooking - salt drys meat out, so always salt after its cooked.

If you don't have a mallet get one. You put you steak between two pieces of sirranwrap and start hitting it until it is tenderized.
Buy a miniature grill for the stove top and grill your steak and your chicken on it. seasonings to add sage, thyme, black pepper, salt, soya mushroom sauce.

There is a really nifty gadget called a Jaccard (or Jacard). It has a lot of teeny knives in it, it's handheld, and the knives come down when you whack the meat. I used it all the time to tenderize steaks at my restaurant. Still have it too, it's indestructable!

I would never do that. If I couldn't get to a grill I might try the broiler but, most likely I'd go out to eat.

you can tenderize a steak by placing it in a plastic bag and hitting it with a mallet or a large slotted spoon. make sure to rotate the bag so that it is evenly done.
