Seafood Butter Sauce and Baste
1/2 cup butter
1/2 tsp. dried rosemary
1/2 tsp. dried tarragon
3/4 tsp. salt
1 tbsp. lemon juice
Melt butter in a small saucepan. Add remaining ingredients. Brush on seafood; baste occasionally during grilling.

May also be served warm as a nice dipping sauce with shrimp, crawfish, crab and lobster.

Sage butter sauce

1 t Unsalted butter
1/2 c Dry white wine
1/2 c Heavy cream
1/2 c Low sodium chicken broth
1 t Fresh lemon juice
4 t Cold unsalted butter cubed
1-2 t Minced fresh sage


put butter, wine, cream, broth, and lemon juice in pan and simmer until reduced by half about 8-10 minutes. whisk in butter, 1 T at a time, stirring constantly. do not add more butter until previous addition has melted completely. finish sauce with sage and seasonings. keep warm in a water bath until ready to serve.

Butter Sauce

1 cup Sour Cream
1/4 tsp Seasoned or Onion Salt
1 tsp chopped Chives

Melt butter in a small sauce pan over low heat. Stir in sour cream, seasoned salt, and chives. Warm, but do not boil. Serve as dipping sauce in individual ramekins or small bowls. Great with king crab, shrimp, scallops, and salmon

Drawn Butter Sauce
1/3 cup butter 11/2 cups hot water
3 tablespoons flour 1/2 teaspoon salt
1/8 teaspoon pepper

Melt one-half the butter, add flour with seasonings, and pour on gradually hot water. Boil five minutes, and add remaining butter in small pieces. To be served with boiled or baked fish.

Ingredients:
Butter
Lobster heads
Tomato puree

Step 1.
Wash the lobster heads well

Step 2
Shake dry, crack and put in heated oven till dry and red

Step 3
In a thick bottom pan heat some oil
Add and saute tomato puree for red colour
Add the roasted lobster heads and rest of butter
Keep pan on very slow flame for 30 mts or so
Strain the butter
Let it stand for sometime
Slowly pour the same leaving behind the scum

It is my understanding that to make "drawn" butter you melt the butter and put through a strainer or cloth. You serve the butter warm that results from the straining. I like plain old melted butter just fine but this is the recipe I was given for drawn butter.

SAVORY BUTTER VARIATIONS

TO 3/4 CUP WHIPPED BUTTER ADD ANY OF THE FOLLOWING:

2 tbsp caraway seeds

1/4 cup finely snipped chives

1/4 cup finely snipped fresh parsley or fresh basil and 1/2 teaspoon lemon juice

3 tbsp finely snipped fresh tarragon and 1/4 tsp lemon juice
2 tsp curry powder and 1/4 cup flaked unsweetened coconut
1 tbsp onion juice and 2 tbsp grated parmesan cheese
1 tsp garlic juice, 1/4 tsp lemon juice and 1/4 tsp celery seeds
3 tbsp drained prepared horseradish
3 tbsp chopped chutney
1 tbsp anchovy paste and 1/4 tsp lemon juice
2 tbsp chili sauce and 3 drops hot-pepper sauce
2 tbsp ketchup, 1/4 tsp lemon juice and 1/8 tsp red(cayenne)pepper
2 tbsp well-drained India relish and 1/2 tsp onion powder
2 hard-cooked eggs, finely chopped, 1/4 tsp salt and 1/8 tsp red pepper
1/2 cup shredded cheddar cheese and 1/8 tsp dry mustard
2 tbsp mashed feta cheese,
1/4 tsp garlic juice and 2 tbsp finely chopped ripe olives

Or just melt butter and add a lil garlic to the melted butter

it's called clarified butter. you make it by simply melting the butter, then pouring off the cloudy part, and using the clear liquid. some people also add a few drops of lemon juice
