They probably are ignorant to the fact that by saying "my god" they are creating a god separate from the God.

My god is all mine and you can't have him. Nobody would want your god because you have already used him.

I think because its said to reflect that they have a personal relationship this their God. At other times I think it is said to reflect the differences between belief about God.

Because it is the god that they personally believe in. Some people do respect that others have different beliefs

people think 'their god' is better than 'your god' because their god is 'real' and 'the right one' or that 'their god' is better tha yours.
really I think it's god's choice as to who's god he is. and who HIS people are. instead of the other way around.
