Chocolate-Marshmallow Frosting:
This recipe goes with Heavenly Candy Bar Cupcakes, Heavenly Candy Bar Cake
3 cups miniature marshmallows
3/4 cup butter or margarine, cut up
3/4 cup evaporated milk
6 ounces unsweetened chocolate, chopped
6 cups powdered sugar
1 tablespoon vanilla extract
Melt first 4 ingredients in a 2-quart saucepan over medium-low heat, stirring 5 minutes or until mixture is smooth.
Transfer chocolate mixture to a large bowl. Place the bowl into a larger bowl filled with ice and water. Gradually add powdered sugar, beating at low speed with an electric mixer. Increase speed to medium-high, and beat 5 minutes or until frosting is cool, thick, and spreadable. Stir in 1 tablespoon vanilla.
Yield: Makes 4 1/2 cups

SEVEN MINUTE MARSHMALLOW FROSTING
2 unbeaten egg whites
6 tbsp. cold water
Few grains salt
1 1/2 c. granulated sugar
1/2 tsp. cream of tartar
Combine the above ingredients, blending thoroughly in top of double boiler over briskly boiling water. Immediately beat with electric beater until frosting stands in stiff peaks, approximately 7 minutes. Slowly beat in 1 cup miniature marshmallows until melted. Remove from heat, add 1 teaspoon vanilla. Frost cake, and sprinkle with 1 can coconut or chocolate jimmies.

Here's a quick and easy recipe from Rachael Ray...
"Marshmallow Frosting" - enough for 24 cupcakes
4 sticks (1 lb.) unsalted butter; at room temperature
2 cups confectioners' sugar
1/2 tsp. pure vanilla extract (optional)
1 (16 oz.) container marshmallow creme (Marshmallow Fluff)
In large mixing bowl, beat butter until creamy.
Beat in 1/4 of the sugar until fluffy, then repeat with remaining sugar.
Beat in vanilla, then stir in marshmallow creme until well blended.
