Bacon Deviled Eggs:
3 slices bacon (3 oz.)
8 hard-cooked large eggs
1/3 cup mayonnaise
2 tablespoons thinly sliced green onions
1 teaspoon prepared mustard
Salt and pepper
1. In an 8- to 10-inch frying pan over medium-high heat, cook bacon, turning slices as needed, until browned on both sides and crisp. Transfer to paper towels to drain. When cool enough to handle, crumble bacon.
2. Cut each egg in half lengthwise; gently scoop out yolks and place in a bowl. Mash yolks with a fork, then stir in mayonnaise, green onions, mustard, and crumbled bacon until well blended. Add salt and pepper to taste.
3. Spoon or pipe about 1 tablespoon yolk mixture into the hollow of each egg-white half. Serve immediately or cover and chill up to 4 hours.
Yield: Makes 16 deviled eggs; 8 servings

Omlettes and egg dishes
Omelettes are healthy and simple to make. I use 2 or 3 eggs per person with a little bit of water, salt, pepper and cayenne pepper. In a small skillet melt some butter (1 Tbs. or so). When the pan is evenly covered with butter, add the egg mixture which has been well beaten. As the edges of the omelett become firm, lift them up and allow the egg mixture to run under the cooked portion so that all can cook well. Just before the top is firm put a spread or vegetables of your choice in the center. To place the omelet on the plate slide 1 half of the omelett on the plate and then using a spatula flip the other half so that it folds on top of the first part. It’s easier than it sounds...just takes a bit of practice. There are many ways that you can vary the omelett fillings. Annie's Eggs
6 lrg baking potatoes
1/4 cup butter or margarine plus
2 tbl butter or margarine
3 tbl sour cream
1 tbl chopped fresh chives
1 tbl crumbled cooked bacon
2 tsp salt
1 tsp freshly-ground black pepper
6 sm eggs
1 cup shredded Cheddar cheese - (4 oz)
Method :
Scrub potatoes; prick each several times with a fork. Bake at 400 degrees for 45 minutes to 1 hour or until tender; cool slightly.
Cut off top third of each potato; discard. Carefully scoop out pulp, leaving 1/8-inch-thick shells. Set shells aside. Mash pulp with a fork.
Combine pulp, butter, sour cream, chives, bacon, salt and pepper in a bowl; stir well, and spoon evenly into shells. Place shells on an ungreased baking sheet.
Make a deep well in middle of mixture in each shell. Break 1 egg into each well; sprinkle evenly with cheese.
Bake at 350 degrees for 20 to 25 minutes.
This recipe yields 6 servings.
Comments: For the sake of time and convenience, prepare the recipe the night before, except do not add the eggs, cover and refrigerate. Next day, allow the stuffed potatoes to come to room temperature, then add the eggs and bake as directed.

Huevos Rancheros... This is our version of Huevos Rancheros... For breakfast or for dinner.
* 1/2 chopped onion
* 1/2 Bell pepper
* 16 oz can of Black Beans
* 3 garlic cloves
* 16 oz water
* 4 tortillas
* 4 eggs
* Cooking oil
* Butter
* pinch of chili powder
* Hot Sauce
* Shredded Monterey Jack, Cheddar or Manchego cheese
Pre-cooking:
* Chop the onion, bell peppers and garlic
* Drain the can of black beans.
On a hot saucepan, heat some oil, add the garlic, onions and peppers. Add the Black Beans and use the use to add water (16oz). Let it boil for 3-5 minutes, then reduce the heat to simmer for about 8-10 minutes.
On a small frying pan, add some butter and make sunny side up eggs.
Pre-heat your tortilla on the microwave for about 15 secs.
Serve your Black Beans mixture on the flat-oppened tortilla, add two sunny side up eggs and add your favorite shredded chease. Cover your plate so the vapor could melt the cheese.
Add some Tabasco and Enjoy!!!

Egg Kababs
Ingredients
4 eggs-hard-boiled
2 tsp besan
1 onion(small) finely chopped
1 egg (white only)
1 tbsp pudina(mint) leaves, finely chopped
1 tbsp coriander leaves, finely chopped
2 green chillis, finely chopped
1/4 tsp chilli powder
salt to taste
oil for frying
Method:
Grate the hard boiled eggs finely. Combine with all other ingredients except oil.
Mix well and knead into smooth dough. Divide mixture into 10-12 equal portions.
Shape each portion into flat round cutlets and keep aside.
Heat oil in kadai and fry kababs,few at a time untill crisp and golden brown.
Serve hot, garnished by onion rings and accompanied by mint chutney.
Egg Pizza
Ingredients for Cooking
Eggs - 4
Onion - 1
Tomato
Capsicum
Carrot - 1/2
Chicken sausages (optional)
Mozzarella cheese or whichever available
Salt- to taste
Chilly powder- to taste
Oregano (optional)
Method:
Finely chop all the vegetables and in a pan sauté them a little.
Separate the egg whites from the yolks. Beat the whites well. Add the egg yolks.
Add salt and chilly powder to this mixture. It should be well beaten, light and frothy.
In a fry pan heat oil and gently pour the beaten eggs over low flame. Spread the vegetable mixture evenly on top.
Make thin sausage roundels and top it on the eggs.
Sprinkle the mozzarella cheese generously and a pinch of oregano. Cover and cook on low flame.
Takes around 15-20 minutes on low flame till the cheese has melted well and the egg is cooked.
The pizza is ready. Cut slices and serve with hot garlic bread or simply savour it. You can use any vegetables of your choice…….,olives, mushrooms anything and make it more interesting.
Egg Curry
Ingredients
Egg 3 no
Big Onion 3 no
Potato medium 2 no
Coriander powder 1tbsp
Green Chilly 4 no
Salt to taste
Oil
Ginger Garlic paste 1 tbsp
Garam Masala 1tsp
Cocount 1 cup grated
Coriander leaves for decoration
Method:
Slice the onions.
Cut potatoes to small pieces.
Split green chillies into two.
Boil the eggs and keep aside.
Heat oil in a pan. When it becomes hot put the sliced onion and fry until golden brown. Add the ginger garlic paste to this and fry again for two minutes.
Extract milk from coconut by beating it with litttle luke warm water. Repeat again this to get the second milk with 1 cup water.
Put the potatoes to the pan and add salt coriander powder, garam masala powder to it. Pour in the second milk and the green chillies. Simmer it until the potatoes are cooked well. Add the first milk. Put off the heat. Decorate it with coriander leaves.
This curry is ideal with chappathi's puri's or appam.
Yummy Egg Do Pyaza
Ingredients
1) 2 Onions (US size)/3 big Indian size onions
2) 4-5 Eggs
3) Coriander leaves
4) Dry Coconut -4 Tea spoons grated.
5) 2 Cloves
6) 1/4 tbsp Ginger paste.
7) Oil
8) Chilli powder
9) Salt
10) 1 clove Garlic
11) Turmeric
13) Methi seeds 2-3 soaked overnight
Method:
Grate Dried coconut and roast it till it becomes brown.
Make paste of the above, 1/4 small spoon shahjira, 2 cloves, 1 pepper ball, 1/4 ginger paste, 1 cardamom, about Quarter bunch of coriander, 1 clove of garlic , half cup of water and keep it aside
Heat some oil and fry the onions till they are brown.
Add salt, turmeric 1/4 spoon garam masala, chilly powder,2-3 methi seeds soaked overnite and simmer it for 5 more minutes.
Add the paste you have made and simmer it for 2-3 minutes more till the oil separates.
Gently break the eggs into the masala. Do not scramble.
Cover it with lid and simmer for 5-6 minutes..... there you go garama garam spicy kharat...tayyar...mmmm...!! Keep watching for many more spicy dishes to come..let me know how you like it.

"Egg Foo Yong" - 5 servings
2 tbsp. salad oil
3 eggs
1 cup bean sprouts; drained
1/2 cup chopped cooked pork
2 tbsp. chopped onion
1 tbsp. soy sauce
Sauce (recipe follows)
Heat oil in skillet. Beat eggs until thick and lemon colored; stir in bean sprouts, pork, onion and soy sauce.
Pour 1/4 cup mixture at a time into skillet; with broad spatula, push cooked egg up over meat to form a patty. When patties are set, turn to brown other side. Serve hot with Sauce.
SAUCE:
1 tsp. cornstarch
1 tsp. sugar
1 tsp. vinegar
2 1/2 tbsp. soy sauce
1/2 cup water
Combine in small saucepan. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
