Yes my friend liver@onions are a treat for many people. The best type is the young calf`s liver,The dark beef liver is not as popular as the calf`s liver. A lot of good iron in it to consume. I was told you should have some at least once a week. For people with low Iron count,it`s very helpful in raising that number. Also for people with low ferritin levels,it will help getting that up to a good number.I prefer it fried with onions and mashed potatoes, and a veggie on the side. You can`t beat that combo. Sounds so good I`am going to have some today! Good Luck

I like it too! It's good cooked slowly in butter, after rinsing it and coating it with flour. also have to have the sliced onions cooked along with it. OH SO GOOD! I have made it also in scalloped potatoes, carrots, onions, and liver ,different but good. It is a recipe from a old cook book. My brother who really hates liver, liked it in the scalloped potatoe recipe. I fixed it and did'nt tell him what all was in it! I think it makes a big difference on how it is fixed.....If u like it or not! Most over cook it! Sounds good right now.

I just love that combination. I like to fry the onions in just a bit of oil then add the liver and cook until done.

Oh yes, I love beef liver with onions. I never order it when eating out because it's usually overcooked and dry as bones. I dredge the liver with flour, season with salt and pepper and put it in a hot iron skillet with canola oil. I fry it quickly and get it out of the pan. Then I sautee the onions and add them to the liver. I serve it with creamed potatoes and corn. YUMMMMM!!!

I hated liver until my husband made it Turkish style! Now it is one of my all time favorites!
To make slice the liver while almost frozen very thin
dredge in flour and fry in a good olive oil
slat and pepper serve with thinly sliced raw onion with ground sumac on the top...best yet!

Growing up, I was forced to eat liver and onions and my mom cooked it pretty bland. She would fry the liver, make a gravy and simmer the liver in it and add onions. Pretty droll. Because I am anemic and liver has oodles of iron, I learned to spice it up but keep it simple. Here's a great recipe you might want to try if you want to make the old fashioned recipe a little more pep. Since my husband is Muslim, I do not add the bacon. :)
12 ounces bacon, slab or sliced, in 1 by 1/4 inch pieces
10 tablespoons (1 stick plus 2 tablespoons) unsalted butter, cold
6 tablespoons minced shallots
1/2 teaspoon salt
3/4 cup red wine vinegar
3/4 cup brown veal stock or chicken stock
1/4 cup stoneground mustard
6 (8ounce) slices calf's liver, trimmed of all sinew and cut into 1/2 inch slices
Salt and freshly ground black pepper, to taste
1 tablespoon unsalted butter
Sauteed Onions, recipe follows
Fry bacon until crisp. Drain on paper towels and reserve.
Melt 4 tablespoons butter in a medium skillet over moderate heat. Cook shallots with salt until soft and nearly golden, about 3 minutes. Add cooked bacon, stirring briefly to rewarm. Add vinegar, turn the heat to high and reduce by half. Add stock and reduce again by half. Break remaining butter into small pieces and whisk into sauce until smooth. Whisk in mustard and remove from heat.
Preheat grill or a dry skillet. Season liver with salt and pepper. Grill or saute in melted butter over high heat, about 3 minutes per side.
Arrange liver over a bed of Sauteed onions on individual serving plates and spoon on sauce. Serve immediately.
Sauteed Onions:
6 tablespoons (3/4 stick) unsalted butter
3 small onions, thinly sliced across width
1/2 teaspoon salt
Melt butter in a large skillet over high heat. Reduce heat. Saute onions with salt, stirring occasionally, until golden brown, about 15 minutes.

Liver does amazing things to your longevity. It's health benefits go WAY beyond carbs, fat grams and cholesterol count...
I ordered some just last night with a side of turnip greens. And lots of chili sauce! MMM! :) I've been eating it that way with my father since I can remember.
