Canola is rapeseed oil which has been processed to remove toxic chemicals. This process was first perfected in Canada in the 1970's, hence Canola. It is considered a healthy fat as its mostly unsaturated. Monounsaturated fats and polyunsaturated fats are not associated with the increased risk of heart disease to the same extent as saturated fat, present in animal products and some plant sources such as coconut oil, palm kernel oil, and cocoa butter. Other products with high amounts of monounsaturates include olive oil and high-monounsaturated forms of sunflower seed and safflower oils. For health purposes olive and canola are probably similar. I prefer olive oil because it is the only vegetable oil which is edible right after pressing with no need for processing which can remove the natural antioxidants in the oil. It also has its natural flavor as opposed to canola which has been deodorized during processing

Olive oil versus canola oil
Do not fall into the hype which is put out by traditional medicine regarding the promotion of canola oil (rapeseed) as superior due to its concentration of monounsaturated fatty acids. Olive oil is far superior and has been around for thousands of years. Canola oil is a relatively recent development and the original crops were unfit for human consumption due to their high content of a dangerous fatty acid called euric acid.
My personal choice is Olive Oil .

You lose the benefits of olive oil if you cook it. Use olive oil raw and cook with canola. Olive oil is also great for your skin.

i go for olive oil, because there has been rumors over the internet that canola is bad for you. none has been proven yet. but i havent heard anything bad regarding olive oil.

Go for olive oil. It's very healthy, and only made from one natural ingredient! You can't get much healthier than that, unless you get organic olive oil.

"Best" depends upon your goal. If your goal is to include the fewest saturated fats in your diet, canola is best. If yoru goal is to include a mix of oils, including monounsaturated fats, then olive oil is best.
To get hte best, I'd suggest OO for salad dressing or roasting b/c of it's nice flavor, and cnaola for most everythign else.
