Baked Potato Casserole
Original recipe yield: 20 servings

INGREDIENTS
5 pounds red potatoes, cooked and cubed
1 pound sliced bacon, cooked and crumbled
4 cups cubed Cheddar cheese
4 cups shredded sharp Cheddar cheese
1 large onion, finely chopped
1 cup mayonnaise*
1 cup sour cream
1 tablespoon minced chives
1 teaspoon salt
1/2 teaspoon pepper
DIRECTIONS
In a large bowl, combine potatoes and bacon. In another bowl, combine the remaining ingredients; add to potato mixture ad toss gently to coat. Transfer to a greased 4-1/2-qt. baking dish. Bake, uncovered, at 325 degrees F for 50-60 minutes or until bubbly and lightly browned.
Reduced-fat or fat-free mayonnaise may not be substituted for regular mayonnaise in this recipe.

Bananas Foster Cheesecake Squares
Prep Time: 20 min
Total Time: 3 hr 50 min
Makes: 24 servings, 1 square each
2 cups finely crushed NILLA Wafers
1/2 cup PLANTERS Chopped Pecans
1/4 cup (1/2 stick) butter or margarine, melted
3/4 cup firmly packed brown sugar, divided
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
2 tsp. rum extract
3 eggs
1/2 cup mashed ripe banana
2 medium bananas, sliced
2 tsp. lemon juice
25 KRAFT Caramels (about 1/2 of 14-oz. bag)
2 Tbsp. milk
1/2 cup PLANTERS Pecan Halves
PREHEAT oven to 350°F. Mix wafer crumbs, chopped pecans, butter and 1/4 cup of the brown sugar until well blended. Press firmly onto bottom of 13x9-inch baking pan.
BEAT cream cheese, remaining 1/2 cup brown sugar and rum extract in large bowl with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Stir in mashed banana. Pour over crust.
BAKE 30 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight.
TOSS sliced bananas with lemon juice; spoon over cheesecake. Place caramels and milk in microwavable bowl. Microwave on HIGH 2 minutes; stir until caramels are completely melted. Drizzle evenly over bananas; sprinkle with pecan halves. Cut into 24 squares. Refrigerate any leftover cheesecake squares.
Great Substitute
Substitute 2 Tbsp. dark rum for the rum extract.

Since this is a food related party, why not have everyone bring something for a food pantry? Maybe as part of the festivities you could put together a food basket that you would present to a group that you know distribute baskets. As party gifts for your guests to take home - how about a scrapbooking activity where everyone puts together their own recipe book of recipes from the event. You could provide the empty books or binders and ask everyone to bring specific items for all to use to create their own personal book. Maybe someone could take digital photos which everyone could get later to add to their book. What about bringing in a chef from a local retaurant or cooking school to teach your group a specific technique - such as making spring rolls, or fancy appetizers. Or maybe someone in your group would be good at doing something like that. Have graham crackers and various things that could be used with royal icing to create a gingerbread village. We did this one year at our house all afternoon Christmas Eve and was able to save the village - made on a sheets of heavy cardboard covered wtih foil, for years. (we packed it away in airtight plastic box.) I provided pretzel sticks, gum drops, wafer candies, licorice, little gingerbread people from a box, jelly beans, various other candies,etc. Everything used had to be edible. People just worked on parts of the village as the mood struck them and them went on to something else. Some came back several times. We had a ball and the end results were wonderful! Hope this gave you a few ideas and maybe sparked some of your own. Have a great party - wish I could be there!

Christmas Morning Sticky Buns:
1/2 cup chopped pecans or walnuts
1 (25-ounce) package frozen roll dough, thawed
1 (3.4-ounce) package butterscotch instant pudding mix
1/2 cup butter or margarine, melted
1/2 cup firmly packed brown sugar
3/4 teaspoon ground cinnamon
Sprinkle pecans in the bottom of a buttered 12-cup Bundt pan.
Arrange dough in pan; sprinkle with dry pudding mix.
Stir together butter, brown sugar, and cinnamon; pour over rolls. Cover and chill 8 hours.
Bake at 350° for 30 minutes or until golden brown. Invert onto a serving plate, and serve immediately.
Yield: 8 servings

My family loves cherry cream pie and it's simple to make.
First bake an empty store bought deep dish crust according to directions. Then cool it.
Next use a large bowl and put in 1 can of Eagle Brand milk. Don't substitute another kind. Add 1/3 cup of real lemon brand lemon juice...Mix. Now add 1 teaspoon of vanilla and 1/2 teaspoon of almond extract...mix. Last add in a12 oz. container of cool whip and mix well. Pour into pie shell and chill till firm, Finally top with a can of cherry pie filling and put in the fridge til time to serve. Serve thin slices cause it's really rich.

Pumpkin Roll
eggs
1 cup white sugar
2/3 cup solid pack pumpkin puree
1 teaspoon lemon juice
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 cup chopped pecans
1/2 cup confectioners' sugar for dusting
1 (8 ounce) package cream cheese
4 tablespoons butter
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/4 cup confectioners' sugar for dusting
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan.
In a large bowl, beat eggs and sugar with an electric mixer on high speed for five minutes. Gradually mix in pumpkin and lemon juice. Combine the flour, baking powder, salt, cinnamon, and ginger; stir into the pumpkin mixture. Spread batter evenly into the prepared pan. Sprinkle pecans over the top of the batter.
Bake for 12 to 15 minutes, or until the center springs back when touched. Loosen edges with a knife. Turn out on two dishtowels that have been dusted with confectioners' sugar. Roll up cake using towels, and let cool for about 20 minutes.
In a medium bowl, combine cream cheese, butter, 1 cup confectioners' sugar, and vanilla. Beat until smooth. Unroll pumpkin cake when cool, spread with filling, and roll up. Place pumpkin roll on a long sheet of waxed paper, and dust with confectioners' sugar. Wrap cake in waxed paper, and twist ends of waxed paper like a candy wrapper. Refrigerate overnight. Serve chilled; before slicing, dust with additional confectioners' sugar.

We like making a sausage dip.
2 lbs. of philadelphia cream cheese
2 cans of rotel tomatoes*
2 Packs of sausage
*use any level of spicyness to your liking but normally the original is spicy enough
cook the sausage and then add the cream cheese and tomatoes let it simmer and thicken. serve with tortilla chips.

My mom used to bake a cake and cut the edges off to make a christmas tree. Its not to hard to do. She would get vanilla icing and add green food coloring. Also get some coconut put it in a bowl and add green food coloring (The needles of the tree) and sprinkle it on the cake.
Get jelly beans or some colorful candy and stick on the tree for lights and decorations.

For a Christmas Pot-luck---Make a double batch of rice krispy treats----when working with the marshmallow put a few drops of green food coloring in -----then shape the mix into a wreath---use red hot candies for the berries& a place a new red bow on. You can cut the circle into little wedges.You will get compliments on the dessert..........Have fun....

Baked Cranberry Pudding
INGREDIENTS
1 cup packed brown sugar
2 eggs, separated
1/2 cup whipping cream
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3 tablespoons grated orange peel
1 teaspoon baking powder
1/2 teaspoon cream of tartar, divided
1/8 teaspoon salt
3 cups coarsely chopped fresh cranberries
1/4 cup butter or margarine, melted
TOPPING:
1 1/2 cups sugar
1/2 cup orange juice
2 1/2 cups whole cranberries
In a bowl, combine brown sugar and egg yolks. Add whipping cream, vanilla, cinnamon and nutmeg; set aside. In a large bowl, combine flour, orange peel, baking powder, 1/4 teaspoon cream of tartar and salt. Add chopped cranberries; stir to completely coat. Add brown sugar mixture and butter; mix well. (Batter will be stiff.) Beat egg whites until foamy. Add remaining cream of tartar; beat until soft peaks form. Fold into batter. Pour into a greased 9-in. springform pan. Bake at 350 degrees F for 45 to 50 minutes or until a toothpick inserted near center comes out clean.
Meanwhile, for topping, bring sugar and orange juice to a boil in a saucepan. Cook for 3 minutes or until sugar dissolves. Reduce heat; add cranberries and simmer 6 to 8 minutes or until berries begin to burst. Remove from heat and cover.
When pudding tests done, place springform pan on a jelly roll pan. Spoon warm cranberry sauce over top. Return to the oven for 10 minutes. Cool for 10 minutes before removing sides of springform pan. Cool at least 1 hour or overnight. Before serving, reheat at 350 degrees F for 10 minutes.
