I have replaced cheddar with fetta! It is so tasty and lower in saturated fats. It toasts nicely too.

It really depends on the dish you are making. I have used velveeta or sliced american cheese instead of cheddar.

what are you using cheese for? if for topping on cooked foods, you can use just about any cheese to melt on top-each cheese looks inviting to eat and gives you a different taste each time you make a meal. if for cheese and crackers - try every variety that's out there - i like to cube different color cheeses. they make a pretty platter with crackers in the middle.

I guess it would depend on what you were using it for. I made mac and cheese with colby and monterey jack cheese and it was yummy!!

Colby jack, jack, mozzarella, or for a really great taste there's manchego.
