The light brown flat pieces in rice pilaf are not rice at all. It's orzo .. rice-shped pasta. It's toasted first to give it a nutty taste, then the rice, seasonings, broth etc. are added.

in most cheaper rice pilafs it is orzo pasta, however in the better more expensive ones it is pine nuts. they are called pignoli nuts sometimes also. the orzo is used as a cheaper imitation of the nuts, not the same texture or taste though. you must try the real thing.

could be wild rice (which has a natural brown color), unprocessed rice or plain whole wheat seeds
