Can't answer the first part but, it appears from this recipe that you should know abouot egg cream.

Bailey's New York Egg Cream

3 oz Bailey's Irish Cream
3 oz Milk
1 1/2 oz Chocolate or vanilla syrup
6 oz Bottle seltzer water or club soda

In a soda glass, stir together the Bailey's, milk, and syrup until well blended. Add the seltzer water all at once, which will produce 2-inch foamy head. Serve immediately.
Makes 1 serving.

This recipe is a modern version of the 1930's New York soda fountain classic.

2 tablespoons chocolate syrup (Ubet or Bosco to be authentic)
5 ounces milk
3 ounces seltzer water


Mix the chocolate syrup and milk together.
While stirring, add the seltzer and continue stirring.
For true Bronx authenticity, wipe your mouth with your sleeve afterwards.
