I always fill the crock pot with every thing it will hold. diced onion, diced carrots, diced potatoes. peas and corn pot roast on top and cover with water season to taste, salt, pepper and soul season. cook on low for several hours, I usually start in the morning just after breakfast, and it is usually done just before supper.

If you can, defrost the roast, dredge it in flour, and brown it in a little oil on each side to sear in the juices. You can skip this if you don't have time to defrost the roast first.
Put 1 package of dry onion soup or onion-mushroom soup and 1 small can of V-8 in the crock pot with the meat. That's all you need. You can add garlic and/or vegetables if you want. Depending on how much meat and veggies you have and the size of your crockpot, you may want to add another package of soup and another V-8.

Put some potatoes, carrots, and onions in the bottom, add the roast on top. Take one package of dried onion soup and mix with one can of cream of mushroom soup and pour over the roast. This makes a wonderful gravy for the roast. Yummy!

Instead of covering your roast with water use French Onion Soup. Not Cream of onion soup. It makes the Roast taste wonderful and when the roast is almost done you can serve the onion soup with the bits that are left in it as a soup.

When I make roast I only use a package of lipton onion soup, a can of cream of mushroom soup, and using the can, a can of water. I usually double it, and sometimes I add more water if needed. If I do that, I will toss in some beef bouillon.
It makes a really tasty sauce.

A packet of italian (dry) salad dressing and a small bottle of pepperoncini peppers..... makes a yummy italian beef. Add enough water to come to the top of the meat in the crock pot. Cook on high for about 8 hours..... shred or slice and serve on italian rolls.

id say 3 cups liquid and do like a beef broth cuz that will help marinade it and season with... well we do everything spicy but if u dont like spicy try.. maybe a bbq sauce.
but then again if u do like spicy add a table spoon each of chipotle pepper, cumin, curry powder, and chili powder.
if you like something sweet use honey, added to the bbq sauce.

I would let it slow cook in Beef broth (like 4 cans) and red cooking wine (2 cups). Add a large can of diced tomatoes (w/ juice) and veggies, like potatoes, carrots, etc. Season it to your liking (garlic, pepper, salt, etc.).
