YUK! Why not just peel them on the day? It only takes ten minutes for crying out loud. Coke also cleans stains from toilets, so I certainly wouldn't want it anywhere near my spuds!

The reason why some fruit and vegs, like apples, advokado and potatoes get brown after taking of the skin, is because it gets exposed to light and air. there is a different enzyme found in each one of them that does not react well with the oxygen in the air and therefor it goes brown. therefor you have to cover it. I usually put peeled potatoes in a bucket of water and ad a tablespoon of lemon juice to it to make it stay nice and white. And whenever I use half of an advokado, I sprinkle the exposed area with lemon juice,cover it with cleanwrap and put in the fridge. The high levels of acid in the lemon juice prevent the exposed area from turnig brown. I hope this is useful to you!! dont leave potatoes for toooo long in water, as it may become soggy!

Potatoes go black when they are peeled because of the starch in the potatoes oxidising. Remove the air by putting them in water and it doesn't happen. However, the longer the potatoes are left before they are eaten the more vitamins are lost. Also most of the vitamins in a potato are just under the skin so if you peel them you lose them. Best not to peel them really!

I hate to think of what that would do to the nutritional value of the spuds.
Try peeling enough for five and storing them overnight anyway.

I've heard of putting an apple in with bananas to stop them going brown, don't know if it would work with potatoes.
