The original margarine formulation used a fractionated beef fat stock (oleo oil, hence oleo margarine) to replace butter fat. Nowadays that oleo oil has been replaced by partially hydrogenated vegetable oil with properties similar to butter fat. The remainder is made up of water, salt, color, milk solids, and flavor. None of these components are used to make plastic.

Lots of things are only one molecule different from something else.

For instance hydrogen peroxide (H2O2) is "but one molecule from" water (H2O), but I don't recommend drinking it. Similarly, Ozone (03) is "but one molecule from" oxygen (O2), but the former can create serious respiratory distress, while the latter can alleviate it.

However, I still avoid margarine since it's an unhealthy and artificial food, and butter tastes better anyways.
