I enjoyed watching his last fight against Brewster, but I've heard none of his fights before that were very impressive. Do you know of any others?

In my opinion, the reason why you never heard anything about exciting fights where Sergei's name is mentioned is because he hasn't been in that many. I admit he indeed looked impressive in his wins against Brewster and Guinn but who's to say that Brewster and Guinn did not have a off night?
I had a opportunity to watch Sergei fight against Maurice Harris in Atlantic City in June 2002, he was kayoed in the 9th round, and he looked everything but impressive in that loss. The good defense that you saw in the Brewster fight was not evident here. The quick accurate punches were nonexistent. His head looked like a Pez dispenser as he was being hit by the very slow and out of shape Harris.
Every fighter on their way up builds their records on fighters that they know they can beat but why was Sergei fighting Onebo Maxime? This guy had more losses than wins and this was in the middle of his career, where there should be some recognizable names not fighters with 15 - 21 records. Sergei was staggered several times in this bout too.
A world class fighter has to be consistent on his way up the ladder if he/she is not, they are open for defeat and criticism just look what happened to Brewster.
