*Cheese slices don't go well when your serving cheese and crackers.
*Cheese cubes taste better
*You can;t put sliced cheese on a salad w/o cutting it up 1st
* You can't shred sliced cheese.

And many more reasons
Why does it matter anyways?

cheese starts out as a a thick liquid
and the shapes depend on the forms .
although a lot of cheese comes out of wrapped cheese cloth has a cicular shape and is left on planks to dry
also many cheeses are big fat circular shapes, and slices are cut and then wrapped individualy and sold like that ,so they turn out triangular

Actually cheese originally came in what was called a round. The main reason is convenience.

cheese comes in cubes because you can cut it easier, put it into littler blocks and they fit on crackes better.
