To add flavor. Plus a "pinch" (Although some peoples "pinches" are huge) isn't overwhelming the dish. It is just adding to the flavor and bringing out the flavors of the other ingredients.

well to much salt is not good for you for one thing .
but mainly its to favour the food, but some recipes do use a teaspoon of salt or a 1/4 of a teaspoon it all depends on the recipe
