I am emailing someone from New Zealand, and i want to know what time we can both be on, so we can carry an actual conversation. What is the difference between California, USA and Christchurch, New Zealand?

Add 1 day then subtract 4-hours. So they are 4-hours ahead of you but on the next day.

Almost a day, since NZ is one of the first countries to cross the dateline, it would then take almost a full rotation of the Earth (minus the width of the Pacific ocean) before California entered the same timezone.
