I am an awful cook. I am trying to bake a very simple and easy cake to impress my mom. =)
Any recipes and suggestions?

Melted Ice Cream Cake

1 package (18.25 ounces) plain white-cake mix
2 cups melted ice cream, your choice of flavor
3 large eggs

Preheat oven to 350 F. Lightly mist a 12-cup Bundt pan or tube cake pan with vegetable-oil spray.

Place the cake mix, melted ice cream and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute to mix. Increase the mixer speed to medium and beat 2 minutes longer, scraping the sides as necessary until the batter is thick and well-blended. Pour the batter into the prepared pan, smoothing the top with the rubber spatula.

Bake 35-42 minutes until it springs back when pressed lightly with your finger and just starts to pull away from the sides of the pan. Remove the pan from the oven and place it on a wire rack to cool for 20 minutes. Run a knife around the edge of the cake and invert it onto a plate. Cool completely.

Finish with a light dusting of powdered sugar or drizzle with melted icing. (I buy it already prepared in a plastic container. Spoon a small amount into a measuring cup, pop it in the microwave for about 15-20 seconds, then pour it over the cake.)

here's a recipe that always works
im sure it will work for you

dont forget the self rising flour
you can subsitute a 1/4 cup of flour for cocoa
for a chocolate cake
or
if you really feel lazy
a few minutes before finishing baking, put a few yorks mint
patties on top
watch
they only take a few seconds to soften
take it out and spread
it all over the top
and never open the oven before 20 minutes
your cake will fall if you do

1 cup (2 sticks) butter, at room temperature
2 cups sugar
4 eggs
3 cups sifted self-rising flour
1 cup milk
1 teaspoon pure vanilla extract

Preheat oven to 350 degrees F.
Grease and flour 3 (9-inch) cake pans. Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed. Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Do this several times to release air bubbles and assure you of a more level cake. Bake for 25 to 30 minutes or until done. Cool in pans 5 to 10 minutes. Invert cakes onto cooling racks. Cool completely and spread cake layers with your favorite frosting to make a 3-layer cake.

Simple Chocolate Cake

#4 (1 oz.) squares unsweetened chocolate
# 1/2 cup butter
# 1 cup water
# 2 cups flour
# 2 cups sugar
# pinch of salt
# 1/2 cup buttermilk
# 1-1/4 tsp. baking soda
# 2 eggs, beaten
# 1 tsp. vanilla
# 2 (1 oz.) squares unsweetened chocolate
# 1/4 cup butter
# 1/2 cup milk
# 4 cups powdered sugar
# 2 tsp. vanilla

Preheat oven to 350 degrees. In a large saucepan, melt 4 squares chocolate and 1/2 cup butter in the hot water and bring to a boil. Remove from heat and add flour, sugar and salt. Mix well with a wire whisk or eggbeater.
Then stir in buttermilk, baking soda, eggs and vanilla and beat until smooth. Pour into 13x9" pan and bake at 350 degrees for 25-30 minutes, until the top springs back when touched with a fingertip.
While the cake is baking, make the frosting. In a heavy saucepan, melt 2 squares chocolate and 1/4 cup butter together. Add powdered sugar, milk, and 2 tsp. vanilla and beat well. You may need to add more milk or powdered sugar to reach the desired consistency: the frosting should be pourable.
When the cake comes out of the oven, let cool for 15 minutes, then pour the frosting over. Spread if necessary, and let the cake cool.

MOIST CHOCOLATE CAKE

Yield: 6 servings

2 c Flour
1 ts Salt
1 ts Baking powder
2 ts Baking soda
3/4 c Unsweetened cocoa
2 c Sugar
1 c Oil
1 c Hot coffee
1 c Milk
2 Eggs
1 ts Vanilla extract
Favorite Icing:
1 c Milk
5 tb Flour
1/2 c Butter, softened
1/2 c Shortening
1 c Sugar
1 ts Vanilla extract
For cake, sift together dry
-ingredients in a mixing
-bowl.
Add oil, coffee and milk;
-mix at medium speed for 2

This cake is easy to make,especially since you just turn it upside down and your topping is beautiful.

Dream Pineapple Upside-Down Cake

Prep Time: 15 min
Total Time: 1 hr 10 min
Makes: 16 servings

3 cans (8 oz. each) pineapple slices in juice, undrained
1 cup firmly packed brown sugar
1/3 cup butter or margarine, melted
6 maraschino cherries, halved
1/2 cup PLANTERS Chopped Pecans
1 pkg. (2-layer size) yellow cake mix (Duncan Heinz Mix)
1 envelope DREAM WHIP Whipped Topping Mix
4 eggs
1 cup cold water

PREHEAT oven to 350°F. Drain pineapple, reserving 2 Tbsp. of the juice; set aside. Mix brown sugar and butter in 13x9-inch baking pan. Arrange pineapple slices in pan, cutting slices if necessary to evenly fit onto bottom of pan. Place cherry half, cut side up, in center of each slice. Sprinkle with the reserved pineapple juice and pecans.
BEAT dry cake mix, dry whipped topping mix, eggs and water in large bowl with electric mixer on low speed 2 minutes. Beat on medium speed 4 minutes. Carefully spoon into prepared pan.
BAKE 50 to 55 minutes or until top springs back when lightly pressed. Let stand 10 minutes; invert onto serving plate. Let stand 1 minute; remove pan. Serve warm or cooled.

Pumpkin Dump Cake

1- 15 ounce can pumpkin
1- 12 ounce can evaporated milk
3 eggs
1 teaspoon nutmeg*
1/2 teaspoon ginger*
1/2 teaspoon cloves*
1/2 teaspoon salt
3/4 cup sugar

1- 18.25 ounce yellow cake mix
1 cup walnuts
3/4 cup or 1-1/2 sticks butter, melted


Preheat oven to 350 degrees F. Lightly grease 9x13 pan. Completely combine 1st set of ingredients. Pour into prepared pan. Sprinkle with cake mix. Gently pat down with spoon. Sprinkle with nuts. Drizzle with butter. Bake for 50 minutes. Cool and cut in squares.

Strawberry Jell-O Poke Cake
16 servings 1¼ hours 15 min prep

1 (18 1/4 ounce) package white cake mix (plus ingredients to make cake)
1 (5/8 ounce) jell-o sugar-free strawberry gelatin
2 cups boiling water
1 (16 ounce) bag frozen unsweetened strawberries
1/4 cup sugar
16 ounces Cool Whip

Prepare cake mix according to instructions on box for a 13x9-inch cake. As soon as cake comes out of the oven, poke holes in it with a fork.

Meanwhile, mix strawberry gelatin with 2 cups boiling water, stirring well to dissolve. Cool slightly. Pour gelatin over the cake and chill until set.

Mix strawberries with sugar. Top cake with the strawberries, juice and all, then Cool Whip. Refrigerate until ready to serve.

Try this! It is only a one bowl method.
*Do not over mix the batter, just mix well will do.

225g self rising flour
225g butter
225g caster sugar
4 large eggs
1 teaspoon vanilla essence
Icing sugar for decoration (optional)

Oven Temp. 180 or Mark 4 for 45 minutes or until golden brown

Well.....what I do is buy a no-bake cheesecake made by jello... It is extremely easy to make costs no more than five dollars.. just throw away the box when you are done and no one is the wiser.....

Try any Duncan Hines cake mix. They always turn out good.
