Baked Flan
1-2/3 cups white sugar
2-1/2 (14 ounce) cans sweetened condensed milk
5 cups heavy cream
2-1/2 cups milk
12-1/2 eggs
1 tablespoon and 2 teaspoons vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a small nonstick saucepan, heat the sugar over medium heat. Shake and swirl occasionally to distribute sugar until it is dissolved and begins to brown. Lift the pan over the heat source (4 to 6 inches) and continue to brown the sugar until it becomes a dark golden brown. You may slightly stir while cooking, but continually stirring causes the sugar to crystallize. Pour caramelized sugar into a 1 1/2 quart casserole dish or a large loaf pan, and swirl to coat the bottom of the pan evenly.
In a blender, combine sweetened condensed milk, cream, milk, eggs and vanilla. Blend on high for one minute. Pour over the caramelized sugar.
Place the filled casserole dish into a larger pan and add 1 inch of HOT water to the outer pan. Bake in preheated oven for 50 to 60 minutes, or until set.

You don't need the serving size, I've done it for you have fun.
Black Raspberry Flan
20 cup Milk
6 33/50 cup Sugar
60 x Eggs
40 tsp Vanilla
A pinch of salt
10 cup Flour
60 cup Black raspberries
Combine milk, 1/4 cup sugar, eggs, vanilla, salt and flour in a blender and mix thoroughly at high speed for 1 minute. Pour a thin layer of batter into a lightly buttered flan dish or deep dish pie plate. Cook over moderate heat until it sets. Remove dish from heat and spread with raspberries.
Sprinkle remaining sugar over berries. Pour remaining batter over fruit.
Bake in 350 degree oven 50-60 minutes until browned. Serve warm!
Note: Flan
is a custard pie that should be eaten almost immediately. Refrigerate

Strawberry Coconut Flan:
This recipe serves 8 so you will need to double it.
Serving size: Serves 8
Cooking time: More than 1 hour
INGREDIENTS
100g ground almonds
100g shredded coconut
25g raw brown sugar
50g butter or margarine, melted
225g cream cheese or low fat skimmed milk cheese, softened
2 tablespoons soured cream
25g raw brown sugar
grated rind of 1 small lemon
1 teaspoon lemon juice
225g strawberries
4 tablespoons strawberry jam
METHOD
Mix together the almonds, coconut, sugar and melted butter. Press the mixture firmly on to the base and sides of a well greased 20 cm fluted flan tin. Bake in the oven at 190°C or 170°C fan forced for 12-15 minutes until pale golden brown. Watch it carefully as it will burn easily. Cool.
Beat the softened cream cheese, soured cream, sugar, lemon rind and juice together until smooth. Spread evenly over the coconut base. Hull and slice the strawberries (keeping 1 whole with its leaves for decoration). Arrange them over the top of the flan. Put the jam into a small bowl and place it over a pan of simmering water until warm. Sieve. Then brush the jam over the strawberries to glaze. Decorate.

just use the Goya Flan boxes. I use 3 boxes, and my family of 5 has flan for two days. So it makes about 10 servings.

Both are good for you, each fruit/vegetable has different vitamins. Therefore as more variety, as better. Vegetables have generally less sugar than fruits.
