After a stroke, the person's personality doesn't change. They are the same person inside. It's because of the physical damage done to their body are they no longer capable of the things that they used to do.
The soul is not affected by any physical action, only the body is.

The Soul Works with the Brain---they Both Affect Each Other.
Thats how it Works, in a Simplified Manner.
It works though.
Did you know that the Soul can Reconfigure parts of the Brain if the Brain is Injured? The Soul can transfer and Reconfigure "the Souls connection" from a Part of the Brain that gets Injured to another Part that is not injured.

I have clinical depression and it has to be managed daily. I used to take medication to help me 'calm down' so I could 'think clearly'. I learned cognitive behavioural therapy; in a nutshell "what you think is what you feel". It was having to take a full time leave of absence for depression that started my journey to get to know God and Jesus as my Saviour.
I've been mediciation and depression free for over 5 years. Sure, I have my moments, but I must challenging my thinking.
Something that has really stuck with me is:
Proverbs 3:5
Trust in the LORD with all your heart and lean not on your own understanding
In my opinion, our mind is very powerful and when it is ill, it can be fatal. I know, I thought about suicide.
As for your soul and brain.... your soul is always with you; you leave your brain you die.
Obviously... I don't have all the answers; no one does. Just sharing based on my personal experience.
