I don't think it's possible to be totally secure about an unknown, so the best you can do is try your best to prepare for every possible contingency. That is all these people are trying to do.
Imagine the first explorers who ventured off into the North American continent. They couldn't know for certain what the land or life would be like. They went off with what they could... their tools and weapons, food and shelter, and their experience. They believed it would be a land not unlike the land they came from. Thinking otherwise would have made them paralyzed by fear.
Death is referred to as "the undiscovered country", but it's more than just a new land to explore. It's a state that nobody has ever seen, or returned from. It's a complete and total unknown. This is very scary. No matter how adept a person may be in life, there's no way they can know for certain if any of their knowledge or skill or experience will matter when they die. There's no way they can prepare for what (if anything) is to come.
This creates an impossible situation for the person who can not conceive of "nothing" or "the end." Most people need to feel that their is always a "next" step or stage. And, since they can not know with certainty what this step will be, they can not prepare for it in any logical, "human" sense. The solution is to create a mythology (actually, a nice way of saying delusion) that purports to explain what will happen, the rules, requirements, and what one must do to successfully navigate this new country. Not only that, but it incorporates the most assuring, protective, loving entity these people can imagine, which is just waiting for them with open arms. This allays their fears, and gives them a sense of community... "we're all in this together."
A good friend of mine used to say all the time, "We must really love rivers an awful lot because so many of us live on the edge of de-nial."
