Fried Rice Recipe:
Serves 4 to 6
Ingredients:
4 cups cold cooked rice
4 tablespoons oil
3 beaten eggs
1 teaspoon salt
Pepper to taste
1 scallion, chopped fine
Directions:
1. Break rice apart with wet hands
2. Heat oil on high flame in wok. Stir-fry rice rapidly, turning spatula constantly until the rice is thoroughly heated.
3. Make a well in center of rice. Pour in beaten eggs. Stir eggs until they are scrambled. Then stir-fry eggs into the rice until thoroughly blended. Add salt and pepper. Stir-fry 30 seconds. Add scallion.

Fried Rice Recipe
8 slices bacon, cut in small pieces
1 cup shredded or finely chopped carrot
1/2 cup chopped onion
1/2 cup chopped celery
1/3 cup chopped green onion
1/2 cup cooked peas
3 cups cold cooked rice
3 tbsp soy sauce
1/4 tsp salt
Put bacon, carrot, onion and celery into frying pan. Saute until onion is soft and clear. It it appears dry, add some cooking oil, 1 tbsp at a time. Add green onion. Saute another 1 or 2 minutes. Add remaining ingredients. Saute until heated through. Check taste for salt. If you are not using soy sauce, you may need more salt. Serves 6 - 8.

I found this one to be really good, and the key to good rice is make sure rice is chilled before adding to pan.
Shrimp Fried Rice-
1 tablespoon vegetable oil
1 cup fresh mushrooms, sliced
1/3 cup green onions, sliced, include tops
1 teaspoon minced fresh ginger root
1 egg, beaten
2 cups cooked rice, chilled
1 1/2 cups cooked shrimp, cut into small pieces
1 tablespoon soy sauce
Heat oil in large skillet or wok over medium-high heat. Add mushrooms onions and ginger, stir-fry 1 minute. Push vegetables aside, pour egg into skillet and scramble. Stir in rice, gently separating grains. Add shrimp and soy sauce, stir until thoroughly heated.

Use cold cooked white rice, Prepare some chopped garlic some grated fresh ginger, and some sliced scallions, set aside. Slice some celery on an angle, a little diced onion, set aside, also get a handful of frozen peas. Crack2 eggs and beat. To start using high heat place a tablespoon of cooking oil in the wok or frying pan, pan should be hot before adding oil, the oil should smoke. Cook eggs and remove, clean out pan, add oila nd repeat with celery and onion
stirfy unitl tender, add alittle water or chicken broth to stirfry. add peas and remove from pan and add to cooked eggs. REpaet with rice but first add the garlic ginger and scallions, then add the rice and stirfry add some water or broth, season with soy sauce when rice is hot, add the eggs and vegetables. To this you can add any cooked meat or shrimp. Its a great way to use up the white rice left from the take out place, and a great way to use up the last piece of roast beef, or pork chop. My kids love it and my youngest son has learned to make this recipe. Its easy it works with leftover linguini also!

Cook some of your favorite rice. Saute vegetables, green onions, carrot shreds, in a wok. Use a flavorful oil. Add some soy sauce and dump in the rice. Stir it around really well. Then crack and egg into a small bowl, and mix it up, then toss it into the rice while it is hot.

the best fried rice is day old or a little older. the purpose of fried rice used to be to use what you had left over that day or next day. first scramble 2 or 3 eggs. set aside next saute some onion & garlic in oilI like green onion set aside (along with egg is fine) then (if you are using frozen veggies steam them in another pot with very little water. if fresh & raw do the same, your veggies of choice) use whatever diced pork, beef, chicken, shrimp, or fish or no meat you want saute, it in oil, add along to eggs& onion & garlic. add some more oil, put in rice & fry it add eggs , onion & garlic & meat if desired & fry a little longer then add veggies & a little sauce then cook a little longer let set for 5 minutes & serve

Get:
4 eggs
Oil
Onions (1 medium bulb)
Garlic (1/2 (one half ) of a clover)
1.5 cups of rice
vegies (carrots/peas/corn/string beans) or one can of mixed veggies.
Soy sauce
(if you want beef or chicken boil it very well and cut into small pieces and set aside.
Salt
Black Pepper
Cook the rice separetly.
While the rice is cooking scramble your eggs and set aside.
Drain your mixed veggies (do not cook if from can)
After rice is cooked (you can use instant rice)
then get a wok or big frying pan

Cut onions + garlic into very small pieces (dice them)
add 1/4 (one quarter cup ) of vegetable oil in wok
heat it, then add your onions , garlic and brown them
Add your rice to this mixture and stir well
Add a pinch of salt and black pepper

Add your eggs and stir in
Add your mixed veggies and stir in
Then add soy sause about a table spoon at a time until is "browns" as you like.

*Cook some rice
*Oil up another pan, cook your chopped up meat and vegs
*Add your spices
*When rice is done add to your meat and vegs
*Break up 3 or 4 eggs into your mix and stir (add oil if needed)
*Cook on med for a few mins (keep stiring)
*Add other stuff you or your guests like!
Note: I add soy and hot sauce to my fried rice. It's better if these sauces are cooked in the mix!
