depending on the number of people, you can just serve assorted cheese with crackers and bread sticks. Many times you can buy a cheese assortmnet cut up and plated right at the grocery store. If its a romantic evening for two, thats all you need. Even if its girls night out this works. You will need more food choices if this is a cocktail party.

You can saute the onions & peppers ahead of time so that when you are ready for the party just get them out, assemble the sandwiches and then place them in the oven.

Awesome Appetizer Sandwich Platter
Three mini-sandwiches combined on a platter--a satisfying and delicious appetizer course.Ingredients:
*Mini Philly Beef:
• 2 Tbsp olive oil
• 1/2 red onion, cut in thin slices
• 1/2 green pepper, cut in thin strips
• 1/2 red pepper, cut in thin strips
• 1 package Kings whole wheat Hawaiian rolls (12 count)
• 1/2 pound pre-sliced roast beef
• 10 slices provolone cheese
• mayonnaise and horseradish spread

• Mini Tuscan Chicken:
• 2 Tablespoons olive oil
• 1/2 red onion, cut in thin slices
• 1/2 green pepper, cut in thin strips
• 1/2 red pepper, cut in thin strips
• 1 package Kings sweet Hawaiian Rolls (12 count)
• 1/2 lb pre-sliced chicken breast
• 10 slices provolone cheese
• 1/4 cup Italian dressing
• Mayonnaise
• ************
• Mini Italian:
• 1 pkg Kings Sweet Hawaiian rolls
• 6 thin slices pre-sliced genoa salami
• 1/2 lb pre-sliced ham
• 1/2 lb pre-sliced turkey breast
• 10 slices provolone cheese
• Mayonnaise
• 1/4 cup Italian dressing
Method:
Mini Philly Beef:
Heat olive oil in a skillet and saute the onions and peppers for 6 minutes. Set aside. Remove rolls from the pan onto a cutting board. Do not separate the rolls. Cut in half thru the middle and lay the tops aside. Spread desired amount of mayonnaise onto the bottom half. Arrange the roast beef slices, cheese, and top with the onions and peppers. Spread horseradish on roll tops and place on sandwich. Wrap the sandwich in aluminum foil and place in a 350 degree oven for 5-6 minutes. Remove from the foil and cut the individual sandwiches apart. Add a party toothpick and arrange on a platter.
Mini Tuscan Chicken: Follow the above directions but substitute with Kings Sweet Hawaiian Rolls and 1/2 lb chicken breast. Use same amounts of onions and peppers and prepare sandwich the same method as philly beef. Omit the horseradish and drizzle Italian dressing lightly over the vegetables before adding sandwich top.
Mini Italian: Use ingredients listed above and prepare the sandwich same method as philly beef.
Notes:
This is such a great appetizer tray to have at a get together--truly a big hit!

Hmm, one of my personal favorites is brie baked inside a flaky pastry dough. You can buy sheets of the dough in the freezer section near the pre-made pie shells. Wrap a block of brie in the pasrty dough and cook according to the package directions. It's awesome on crackers or with fruit, yum!
