Pizza Casserole
4 cups uncooked wagon wheel pasta (8 ounces)
1/2 pound bulk Italian sausage
1 jar (28 ounces) pasta sauce
1 can (4 ounces) mushroom pieces and stems, drained
1/4 cup sliced ripe olives
1 cup shredded mozzarella cheese (4 ounces)
1 cup Pepperoni Slices
1. Heat oven to 350ºF.
2. Cook and drain pasta as directed on package.
3. While pasta is cooking; cook sausage in 10-inch skillet over medium-heat, stirring occasionally, until no longer pink; drain. Mix pasta, sausage and remaining ingredients except cheese in ungreased 2 1/2-quart casserole.
4. Cover and bake about 30 minutes or until hot and bubbly. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted.
Variation
Dress up this casserole when you replace the wagon wheels with an equal amount of rotini, rotelle, penne or farfalle pasta.

Fry in a little oil, lots of garlic and onions. This adds flavor.
Add Pepperoni after it's chopped. Add Italian Seasoning.
Add mushrooms at the end (fresh absorb the oil), canned don't.
Cook any pasta for about 8-10 minutes for al dente.
Drain Pasta, and put in serving bowl.
Add cheese to hot pasta.
Pour mixture of fried onions, garlic, pepperoni on top.
Season after tasting....then salt and pepper because the pepperoni has tons of salt and pepper already in it.
.........Enjoy...Mangia (prounounced Man JAA)

I make a rotini salad using cooked rotini pasta, cubes of fresh mozzerella cheese, diced pepperoni, cherry tomatoes, and an Italian or vinagrette dressing. I don't measure anything -- just fix the amount that I need and toss it with enough dressing to moisten.
If you substituted fresh mushrooms for the tomatoes, is this what you're looking for? Or did you want a mayonnaise based recipe, a hot casserole, or ????
