NYC is very expensive during the holidays especially around Christmas and New Years (the ball dropping in Times Square). 5 star hotel, minimum $300 a night, 5-star restaurant is more than $100, public transportation, like the NYC subway is $2 one way, a cab is about $20 and up. The minimum you will need is at least $5000.
Have fun

I don't think you want 5-star hotels in Manhattan. There's only a few, and they start @ about $600 in the slow season for a regular room, not a suite, and can go into the thousands. Lou (avove) has some great recommendations for both restaurants and hotels, but I would say that almost all of those are only four stars...even the Waldorf Astoria where Foreign Dignitaries and The President of the United States stays is technically only a four star. Check out The Four Seasons, or The Peninsula New York (5th Ave mid-town), or Trump Hotel. ,
Also, count on dinner being $100-$200 bucks a person...but I've spent twice that at 4 star restaurants, so keep that in mind. I would say to count on at least $10,000 USD if you really do want a 5-star hotel and restaurants during the busiest time of year there. Taxi's will run appx. $15-$25 each way. Have fun and dress warm!

Duriing the holidays you won't find a 5 star hotel for under 600-700 a night, food will run about 200 a night for 5 star dining no alcohol. Lunch can be found at great places for under 50.00 a day. Also know many 5 star places require reservations, some months and months in advance! Count on metro cards running 24.00 weekly http://www.mta.nyc.ny.us/metrocard/mcgtreng.htm#unlimited.
And there are places you will want/or need a cab to get to as well.
There are wonderful hotels here that are not 5 star, and should be do some on line leg work before you come!
