Herbed Beef Tenderloin
This beef tenderloin recipe is a wonderful choice for special occasion or holiday.
* 4 pounds beef tenderloin roast
* 1 clove garlic, halved
* 1/2 teaspoon dried crumbled oregano
* 1/4 teaspoon dried leaf basil
* 1/4 teaspoon rosemary, crumbled
* 1/4 teaspoon dried leaf thyme
* 1/2 teaspoon coarse ground black pepper
* 2 tablespoons grated Parmesan cheese
Heat oven to 425°. Rub roast all over with cut-side of garlic; discard garlic. Combine remaining oregano, basil, rosemary, thyme, and pepper; rub over roast, pressing evenly into tenderloin. Place tenderloin roast on a rack in a shallow roasting pan. Roast, uncovered, for 45 to 50 minutes for medium-rare to medium. Meat thermometer should read 140° for medium rare, 155° for medium. Sprinkle Parmesan cheese over top of roasted tenderloin and let stand for about 15 minutes. (Temperature will continue to rise about 5 degrees.)

If you have a whole tenderloin, a Beef Wellington would be nice and elegant. Also, if it is a good tenderloin, you can make Beef Tartare with it....again very elegant...you might want to have a special someone over, nice music, candles and a good Cabernet and you're all set!

This recipe sounds good - maybe you can substitute your beef for the pork...
"Breaded Pork Tenderloins" - 4 servings
1 (3/4 lb.) pork tenderloin
1/4 cup all-purpose flour
1 egg
2 tbsp. milk
1/2 tsp. salt
1/8 tsp. pepper
3/4 cup dried bread crumbs
1/4 cup salad oil
1) Slice pork tenderloin crosswise into 4 pieces. On cutting board with meat mallet, pound each slice to 1/4" thickness.
2) Place flour on waxed paper; in pie plate, beat egg, milk, salt and pepper. Place crumbs on another sheet of waxed paper. Using tongs, dip each pork slice into flour, then egg mixture, then crumbs to coat well.
3) In 10" skillet over medium-high heat, in hot oil, cook pork slices about 10 minutes until well browned and fork-tender, turning once.

i make the whole tenderloin this way- preheat oven to 425. rub tenderloin with oil, season with salt, pepper, garlic, onion, and sage. wrap the roast with thick sliced bacon. place in roasting pan with rack. place pan in oven, after 30 minutes lower heat to 350 and cook until done, 15 minutes per pound. allow to rest for 15 minutes before slicing. make an aujus out of pan drippings. i make this for christmas with scalloped potatoes. if it is steaks, they are best seasoned the same way and then grilled.

slice the tender lion peppers onions mushrooms put together in skillet cover cook slow cooks in own juices salt and pepper to taste
