After I clean all the skin off I use a potato peeler and shave it off into soups and stews. If you want to make horseradish sauce cut it up into small pieces and put it in a blender with a small ammount of vinegar and blend it intil it's the consistency you want. Warning: keep your nose away from the blender top when you lift the lid. Best horseradish ever.

Shrub off the dirt and wash thoroughly, you do not need to peel. Use a fine grater to grate the raw horseradish is a fine paste and serve as a dip like you would with mustard. You do not need to cook the horseradish.

Not sure what you mean by prepare but horseradish should be grated as fine as possible. To preserve it it's best when combined with vinegar. You probably would not want to eat it raw its texture isn't really palatable. You could add it to potatoes for a good mash. Cook it with the spuds and mash.
