Half pint bread crumbs (about three ounces), half pint of milk, strip of lemon rind, two tablespoonfuls of castor sugar. For pastry: Half pound flour, quarter-pound of butter or lard, one tablespoonful of castor sugar, and a good squeeze of lemon juice, and a little cold water. Boil the milk and lemon rind in a white-lined pan. Mix with the bread crumbs a small piece of butter, then pour the boiling milk over. Add the yolks of three eggs and whites of two, and mix thoroughly. Line a dish with short pastry. Put a double edge. Put a layer of damson jam at the bottom of the dish, add the kernels of a few blanched almonds. Flavour the custard with a little essence of vanilla. Pour over the jam. Bake in a quick oven about half an hour.

Manchester Tart
Serves 4
600ml (1 pint) Milk
110g (4oz) Shortcrust Pastry
3 tbsp Raspberry Jam
3 tbsp Custard Powder
2-3 tbsp Desiccated Coconut
2 tbsp Sugar
Pre-heat oven to 200°C; 400°F: Gas 6.
Roll out the dough and line a baking dish.
Blind bake (prick with fork and place a piece of greaseproof paper with some baking beans on pastry).
Bake for 15 minutes.
Allow to cool.
Spread the jam over the pastry base, sprinkle with coconut.
Boil the milk and whisk into the sugar and custard powder (follow manufacturers instructions).
Pour into the pastry case.
Sprinkle with coconut or a little sugar, to prevent a skin forming.
Allow to cool before serving.

Just make a jam tart then pour some thick custard on it and sprinkle coconut on the top and leave in the fridge to set.
