Desert : Chocolate Cherry Cake---- I love cheese cake plus its so easy to make.
1 package devils food cake mix, dry
3 eggs
1 can cherry pie filling
1 teaspoon almond extract
1 cup chocolate chips
In a large bowl combine all of the ingredients and mix well. Pour into a greased and floured 9 x 13-inch baking pan. Bake at 350-degrees for 45 minutes. Serve with whip cream or ice cream.
Appetizer: Amazing Bruschetta---Use small slices of bread for a unique appetizer
2 large tomatoes, coarsely chopped
1/2 sweet onion, chopped
2 tablespoons olive oil
1 tablespoon chopped fresh oregano
1 teaspoon chopped fresh basil
2 teaspoons chopped fresh parsley
1/2 (1 pound) loaf Italian bread, cut into 1 inch slices
1/4 cup freshly grated Parmesan cheese
Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with Parmesan.
Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.
Finger Sandwiches:Party Finger Sandwiches
Ingredients
1/4 cup stuffed green olives (about 12 to 15 olives) finely chopped 1/4 pound Hard salami thinly sliced
1/2 cup cream cheese at room temperature 1/4 pound Pepperoni thinly sliced
10 slices bread White or Whole Grain
Toast the bread lightly. Cut off the crusts, then cut the slices into 4 - 6 pieces.
Mash the olives into the cream cheese with a fork. Spread slices of the bread with the olive spread.
Cut the round slices of salami and perreroni in half (to form a 1/2 moon shape).
Placing a slice of pepperoni on top of a slice of salami, curl them around your finger to form a cone. The round edge will be the point of the cone.
Use a bit of the cream sheese mixture to "glue" the slices together and place a cone on each slice of bread.
OPTIONS:
Add some sweet pickle relish to the spread.
Substitute your favorite thin deli meat.
Peel long thin slices of carrot and chill them in a little sweet picke juice. They will curl up.
Use them (or pickled beets) instead of meat for a vegetarian version.

1) Jello- I like the layered jello, you get three or four different colors. When one color sets you mix the next and pour it over the top. Follow the recipe on box for jigglers. Use a 13x9 pan or glass dish.
2)Jalapino Poppers- I get the frozen kind if I need something quick and easy. Or you can make quesadillas. It's easy, just get tortillas, shredded mexican cheese, and salsa. Generously sprinkle cheese on tortilla and fold in half Microwave it for about 30 sec, until cheese is melted, serve with salsa. Use a pizza cutter to cut into wedges.
3)For a finger sandwich I would use Turkey, mayo, lettuce, and swiss or chedder. Leave the Mayo and cheese on the side so the guests can decide what they want. I use Turkey because I know a few ppl allergic to ham and chicken and turkey is sometimes eaten by some vegetarians.

I have a simple appetizer that is the first to go, everytime!!! It's so easy, you may disregard it but you shouldn't cause it is very good. There are two variations:
1) brie...slice off coating, put on plate, microwave till soft but still has some shape, cover with Rothschilds raspberry or raspberry jalepeno sauce (jelly), surround with crackers......Wheat thins are good
OR......
2. I package of cream cheese, melt in bowl then mix with the same sauce. Put in another small bowl for presentation and garnish with....whatever...(sliced almonds, etc.) surround with crackers.
If you have time, order Prariethyme raspberry jalepeno sauce (instead of Rothschilds) from Prariethyme website.......It is AMAZING!!!!
Trust me...people love this.

In a clear glass bowl (you want to see the layers):
Refried beans / diced tomatos / guacamole / shredded cheese / cream cheese / Salsa / Black olives.
Serve with tortilla chips.
3) Pinwheels
Take flour tortilla, layer meats/cheeses of your choice and roll into a tight 'burrito'. Slice to make little pinwheels.

Finger Sandwiches:
Tuna on toast.
Can of tuna, add relish, and diced celery. Add more or less relish depending on how sweet you like it. Mix it up, then add mayonnaise to the consistency that looks good.
