I am looking for a specific butterscotch no-bake cookie recipe. Please do not give me websites as I've already searched. I would like your homemade recipes.

Here are two of my butterscotch-type "No-Bake" cookies:

Cookies-Butterscotch No-Bake Cookies

1/4 cup milk
1/4 t. salt
2 T. butter
1/4 c. peanut butter
1/2 t. vanilla
1 c. brown sugar
1 1/2 cups quick oatmeal

Combine milk, butter and sugar. Over low-to-medium heat, bring mixture to a boil, stirring constantly. Boil exactly one minute. Remove from heat and add remaining ingredients. Drop by spoonfuls on waxed paper. Let cool at room temperature.

BUTTERSCOTCH DAINTY COOKIES (NO BAKE)

½ cup evaporated milk
¾ cup sugar
2 tablespoons butter or margarine

1 teaspoon vanilla
6 ounce package butterscotch chips
2 cups Grapenut Flakes
1¼ cups cut up flake coconut
¾ cup broken nutmeats (I always use pecans)

Cook evaporated milk, sugar and butter or margarine over medium heat until it starts to boil and gets bubbly all over the top. Start time, boil and stir for 2 minutes more.

Remove from heat and add vanilla and butterscotch chips and stir until melted. Sometimes it's necessary to return to heat. Measure Grapenut Flakes and crush slightly. Combine Grapenut Flakes with coconut and nutmeats. Pour syrup over this mixture and stir until all is coated. Drop by teaspoons on wax paper. Let set. Makes 24 pieces.

This is a quick recipe that i've used plenty of time there not cookies but there so good thought you might like it...


Butterscotch Bars

3 cups zwieback cracker crumbs
2 cups miniature marshmallows
1 cup chopped pecans
2/3 cup packed brown sugar
1 cup evaporated milk
2 cups butterscotch chips
1/2 teaspoon vanilla extract

In a large bowl combine zwieback crumbs, marshmallows, nuts and brown sugar.
In a saucepan over low heat cook the evaporated milk and butterscotch chips. Stir mixture constantly until the chips have melted and the mixture is smooth. Reserve 1/2 cup of the butterscotch mixture for glaze. Combine the remainder with the dry mixture and mix well.
Spread batter into one 8 inch square buttered baking pan. Drizzle reserved butterscotch mixture over the top. Refrigerate bars for several hours or overnight before cutting and serving. Store leftovers in a covered container in the refrigerator.

NO-BAKE BUTTERSCOTCH CRUNCHY COOKIES
INGREDIENTS:
-- 6 cups Special K cereal flakes (or cornflakes) -- 1 (10- to 11-ounce) package butterscotch-flavored morsels -- 1/2 cup creamy peanut butter
INSTRUCTIONS: Cover a large tray or sheet pan with aluminum foil.

Place the cereal in a large bowl; set aside.

Combine the butterscotch morsels and peanut butter in a medium saucepan. Cook and stir over medium-low heat until the mixture melts. Pour over the cereal flakes and gently stir with a rubber spatula until all the flakes have been coated.

Drop the mixture by the tablespoonful onto the foil-lined tray. Place the tray in the refrigerator for 5 minutes to set cookies.

Remove from refrigerator, transfer the cookies to a sturdy container and store at room temperature. Yields about 3 1/2 dozen cookies.

PER COOKIE: 60 calories, 2 g protein, 6 g carbohydrate, 4 g fat (2 g saturated), 6 mg cholesterol, 54 mg sodium, 0 g fiber

♥Butterscotch Haystacks♥

1 cup peanut butter
1/2 package or 6 oz butterscotch morsels
1 large can chow mein noodles


Melt peanut butter and butterscotch together. Can be done on the stove top or in a microwave. Pour over noodles; mix well. Drop by tablespoon on wax paper; freeze for a couple of hours. May be stored in a loose fitting topped cookie jar.

No Bake Butterscotch Cookies
Serves : 24

1 pk butterscotch morsels
3/4 c peanut butter
4 c. corn flakes
1 c. peanuts

Melt over LOW heat, 1 pk butterscotch morsels and 3/4 c peanut butter. In another bowl, mix together 4 c. corn flakes and 1 c. peanuts.

Pour melted mixture over the dry mixture.
Mix until covered evenly.
Drop by teaspoons onto cookie sheet lined with wax paper.
Refrigerate until firm

it might be called haystacks...

1 bag chinese noodles (the brown crispy kind)
1 cup peanut butter
1 bag butterscotch kisses the meltable kind

combine butterscotch and peanut butter in pan over medium heat until melted. stir often add chinese noodles and drop by the teaspoonful onto wax or parchment paper until set up. you can add peanuts or drizzle the cookies with melted chocolate too

Just use the standard chocolate recipe and sub in butterscotch it works pretty good.
