Try www.boletinturistico.com they have many options and they can adapt to your needs. This is my contact gabriel@grupotravel.com.mx
What I would seriously recommend is to visit (some areas are not very close, so you'll have to choose depending on the time you want to expend per country):
In Mexico: Los Cabos, Barrancas del Cobre, Cancún and Playa del carmen, Mexico City, Queretaro or Guanajuato, Veracruz, Oaxaca.
Cuba: Habana y Varadero
Costa Rica
There are many cruises from Mérida or Cancun tu Cuba or Costa Rica. As for the rest of the countries, I would rather have more time in Mexico.

I went on a road trip from Nicaragua to Colorado a couple years ago, and the best advice I can give you is be prepared for long waits. Driving through Central America is fun, but the borders take HOURS! You're stuck at each border for about 3-4 hours. You can drive through some countries in that long.
I suggest that you drive up the beach when you're going through Mexico. Take the beach highway and you'll get to see a lot of pretty coast and popular destinations like Acapulco. Try to stay out of Mexico City. It's so crowded that you can only drive on certain days depending on the last number of your license plate. There are many much more fun places to go. I recommend visiting Ciudad Obregon in the state of Sonora.
Also, I'm partial to Nicaragua because I used to live there. I'd recommend you go there, it's a beautiful country.
Other than that, have fun!

don't drive at night. it's not safe, and the curves aren't marked by reflectors.
I would head south from El Paso through Durango; head southwest into the Copper Canyon area.
From there, I'd follow the Pacific for a while, then cut north for the Yucatan. Then south into Belize, and continue on into Central America all the way to Panama.
