Chicken Cordon Blue
It sounds fancy but it's really simple.
4 Boneless Chicken Breasts
4 slices of Ham
4 slices of Swiss Cheese
1 package of Shake and Bake.
You'll want to pound down the chicken to make it consistant. Then you'll cut it in half long ways. After it is cut put the chicken in the shake and bake mix and shake. Take the chicken out and open the area you cut. Inbetween you'll place your piece of ham and cheese... cover it and place in a shallow baking pan. I follow the cooking directions on the box of shake and bake. It's really good, takes no time and you can impress someone including yourself.
I usually serve it with broccoli and or potatoes.

apple and mango baked bean casserole
1 cup diced onion
2 (15-ounce) cans Boston-style baked beans
1 cup diced Granny Smith apple
1 cup of diced mango
1 tablespoon prepared mustard
1/4 cup brown sugar
1 teaspoon salt
6 strips bacon
Preheat the oven to 350 degrees F.
Coat a 2-quart baking dish with nonstick cooking spray. In a large bowl, combine all the ingredients except the bacon and mix well. Pour into the baking dish and lay the raw strips of bacon on top. Cover and bake for approximately 45 minutes, or until thick and bubbly. Uncover and bake for 5 more minutes
serve with my fave salad-
1 head of lettuce-torn or shredded
1 tomato,sliced
1 cucumber, sliced
1 red onion
1 cup of shredded red cabbage
1 diced avocado, mix together and use either Catalina dressing or Italian your choice

I think you should just make spaghetti. It is easy and almost everyone loves spaghetti, esp. 3 year olds. Get a box of spaghetti 1 jar pasta sauce (choose one from the sauce aisle) 1 can tomatoes 1 lb. ground beef In a skillet, brown the ground beef on medium heat (5-6) by breaking it up and moving it around in the pan. Half way through the cooking process, add in about 1/2 a coffee cup of water and let simmer until the beef is fully brown. Put 1 jar sauce, 1 can tomatoes in a sauce pot. Put on medium heat and stir. If you have garlic, put some chopped garlic in (about a spoonful), and if you have dried herbs, put some basi and oregano in. 1/2 spoonful of each. Also, add in 1 light spoonful of white sugar. Stir and let heat. Drain the beef and add all of the beef to the sauce and put on medium heat (about 4-5). Boil the pasta. Heat a pot of water on high heat until boiling. Add the pasta in, put a dash of salt in, and stir up the noodles. Let cook about 10 mins, stirring occasionally. Taste one to see if they are done. When done, drain it. You can also make garlic bread (get some from the freezer section) and salad (get salad ingredients from the veggie section). Have fun being a stay at home dad!

1 pound ground beef
1/8 cup Fiesta Brand Fajita Seasoning
1 Packet Old El Paso Taco Seasoning
1 Bar Cracker Barell Extra Sharp Cheddar Cheese
Bar-B-Que Sauce, any brand.
Flour Toritillas
Brown the ground beef, add the fajita seasoning, stir, add the taco seasoning, stir, add the bar-b-que sauce (about 1/4 cup), stir and the beef will get really dark.
Place in Flour Tortillas, top with shredded cheddar cheese

This is easy and Not spaghetti
One-Pan Pasta and Meatballs
1 cup water
1 jar (26 to 28 ounces) tomato pasta sauce, (any variety)
1 1/2 cups uncooked elbow macaroni
20 frozen fully cooked Italian-flavor or regular meatballs, 1 inch in diameter
1 can (2 1/4 ounces) sliced ripe olives, drained
Grated Parmesan cheese, if desired
1. Heat water and pasta sauce to boiling in 10-inch skillet. Stir in macaroni, meatballs and olives. Heat to boiling; reduce heat to medium.
2. Cover and cook 15 to 20 minutes, stirring occasionally, until macaroni is tender. Sprinkle with cheese.

I suggest that you cook Chicken Tarragon with cream sauce:
Ingredients:
1 chicken breast
2 leeks
3 tablespoon flour
salt and pepper to taste
200 ml fresh cream
1 teaspoon dried tarragon
1 cube chicken stock
100 ml white wine
2 tbsp oil
1 tbsp butter
Method:
Cut chicken breast into two and then each half into 3 pieces. Season with salt and pepper. Then, coat them in flour and set aside. Slice leeks into fine rings and place them in a sieve. Rinse the cut leeks under running water in order that the dirt get washed away and strain. Heat 2 tbsp oil and 1 tbsp butter in a pan and fry the chicken pieces until golden brown. Set aside. Sauté the leeks in the remaining fat until soft. Then add in about 1 tbsp of the used flour and stir well. Add in cream, white wine, chicken stock cube and dried tarragon. Once the sauce is starting to simmer, add in the fried chicken pieces and cook over medium heat for another 15 minutes. Serve with boiled potatoes or rice.

If you like Chicken. Here it is my favorite "Chicken Bake". for2. . Thaw out 2 pounds chicken, remove fat. dice chicken into 1/4 " cubes. Cook up some plain white rice. you wanna have: seasoned crutons, cheese soup 1 can, cream of chicken 1 can, sour cream 1 cup, 1 pound of celery, a 2x6x10" pan to final bake. Make sure to butter up the pan so as not to stick. Put the rice(about 2 cups cooked) In the bottom of pan. Put raw chicken on top of rice evenly. Add celery evenly. In a seperate pan heat up the cheezy soup, the cream of chicken soup, and the cup of sour cream. next poor out the contents over the chicken and rice blend in the 2x6x10" pan. Heat your oven to 375 F. Cook for about 25 minutes then put your crutons on top(crushed or not). Heat for an additional 3 minutes to heat up the crutons. Enjoy!!!!!!

Southwestern Skillet Bake
1 pound lean (at least 80%) ground beef
1 jar (16 ounces) Old El Paso® Thick 'n Chunky salsa
1 can (11 ounces) Green Giant® whole kernel corn, drained
1 1/2 cups shredded Cheddar cheese (6 ounces)
1 cup Original Bisquick® mix
3 eggs
1. Heat oven to 400ºF. Cook beef in 10-inch ovenproof skillet over medium-high heat 5 to 8 minutes, stirring occasionally, until brown; drain. Stir in salsa and corn; heat over medium-high heat until hot.
2. Reserve 2 tablespoons of the cheese. Stir Bisquick mix, eggs and remaining cheese in medium bowl until blended. Spoon batter around edge of beef mixture, leaving center uncovered. Sprinkle with reserved cheese.
3. Bake uncovered about 20 minutes or until golden brown and toothpick inserted in topping comes out clean.
Substitution
Use Green Giant® Mexicorn® whole kernel corn with red and green peppers instead of plain corn to add even more of a Southwest twist to this skillet bake.

Don’t have Cheddar cheese? Use the same amount of another cheese you have on hand.

Beef Cassoulet with Herb Dumplings
1 pound lean ground beef
1 cup water
1 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
2 cloves garlic, finely chopped
1 medium celery stalk, thinly sliced (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 can (15 to 16 ounces) navy or kidney beans, drained
1 can (14 ounces) beef broth
2 cups Progresso® diced tomatoes (from 28-oz can), undrained
2 cups Original Bisquick® mix
2/3 cup milk
1/4 teaspoon dried oregano leaves
1/4 teaspoon dried basil leaves
1. Cook beef in 4-quart Dutch oven over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
2. Stir water, 1 teaspoon oregano, 1/2 teaspoon basil, the garlic, celery, onion, beans, broth and tomatoes into beef. Heat to boiling; reduce heat.
3. Stir remaining ingredients until soft dough forms. Drop dough by 12 spoonfuls onto beef mixture (do not drop directly into liquid). Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.
Simplify
Save time, not to mention tears. Use prechopped onion found in bags in the freezer section of your grocery store.
