No Yeast Cinnamon Rolls
FILLING:
1/4 cup sugar
1 teas. cinnamon
1/4 cup melted butter
DOUGH
1/4 cup shortening
2 Tbsp. butter
2 cups flour
2 TBSP sugar
3/4 teas. salt
4 teas. baking powder
2/3 to 3/4 cup cold water
Set oven at 400°
Mix the cinnamon and sugar together and set aside. Stir the dry ingredients together, then cut in the shortening and 2 TBSP butter until almost like cornmeal. Some larger lumps are OK. Stir in the water to make a soft but not sticky dough. Start with the 2/3 cup, add more a tsp or so at a time if needed. Turn out onto a floured surface, knead a few times to smooth out the dough. Roll into a rectangle about 1/2 inch thick, or even a little thinner. Brush wll with the melted butter, sprinkle with the cinnamon/sugar mixture and roll up from the long side. Cut into 3/4 inch slices, lay them on a well greased cookie sheet or jelly roll pan and bake for 12-15 minutes or until they are nicely golden brown. Can be eaten as is or drizzled with a glaze made from confectioner's sugar, water and a little vanilla.
For a quick version of of this, use biscuit mix to which you add 2 TBSP sugar and cut in an additional two TBSP of butter, then proceed with the recipe.

2Cups Baking Mix (such as Jiffy/Bisquik)
2/3Cup Milk
1/4Cup Soft Butter/Margarine
3Tbsp Sugar
2tsp Cinnamon
Preheat oven to 425. Blend baking mix and milk. Turn onto a surface dusted with baking mix and knead dough about 20 times. Pat or roll dough to 1/4" thick and into a rectangle 8"x15". Spread with softened butter/marg. and sprinkle with sugar and cinnamon. Roll as for a jelly roll. Cut into 1" pieces and place on greased 11"x7" pan or into a greased muffin pan. Bake 15mins. Serve warm.

You can sprinkle Pillsbury Crescent Rolls with cinnamon and sugar and dot with butter. Roll them up and pop those suckers in the oven. Yummygood and no yeast!

Quick and Easy Cinnamon Rolls
These cinnamon rolls are a little faster to make than most, with no rising time.
INGREDIENTS:
1/4 cup plus 1 1/2 teaspoons shortening
3 cups self-rising flour
1 cup milk
1/2 cup butter or margarine, softened
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 tablespoon ground cinnamon
3/4 cup chopped pecans (optional)
1/2 cup raisins (optional)

Vanilla Glaze:
1 1/4 cups sifted powdered sugar
3 tablespoons milk
1/4 teaspoon vanilla
PREPARATION:
Cut shortening into flour with pastry blender until mixture resembles coarse meal. Add 1 cup milk, stirring until dry ingredients are moistened. Turn dough out onto a floured surface; knead lightly.
Roll dough into a 20x14-inch rectangle; spread the softened butter on dough, leaving a border of about 1/2-inch.

INGREDIENTS
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons butter or margarine, divided

1/4 cup sugar
1 teaspoon ground cinnamon
GLAZE:
1 cup confectioners' sugar
1 tablespoon butter or margarine, melted
5 teaspoons milk
1/8 teaspoon vanilla extract
DIRECTIONS
In a large bowl, combine dry ingredients. Cut in 4 tablespoons of the butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Turn onto a lightly floured surface; knead gently 8 to 10 times. Roll into an 11-in. x 8-in. rectangle about 1/2 in. thick. Melt remaining butter; brush 1 tablespoon over dough. Combine sugar and cinnamon; sprinkle over butter. Roll up jelly-roll style, starting with long edge. Cut into 12 equal slices. Place with cut side down in a greased 8-in. square baking pan. Brush with remaining butter. Bake at 450 degrees F for 18 to 20 minutes or until golden brown. Cool for 5 minutes. Combine glaze ingredients; spread over warm biscuits. Serve immediately.
