i am making green pepper,egg,mushroom and onion subs,can i use a red onion instead of a white onion to cook with my ingredients? i usually use red onion raw in salads,but have never sauted it.

Absolutely. Infact, red onions are milder and sweeter than white onions. That is why restaurants prefer them served raw in salads. One note on saute: To get a better caramelized flavor out of your vegetables, add the vegetables to your oil/butter and let them sit in the pan for a minute or so (especially the mushrooms) before you move them around. Add the salt and pepper when the vegetables are almost done to retain the caramelization and so as not to burn the pepper. Enjoy.

I like cooking with red onion. It's a milder taste and adds color to the food presentation. I only use white onions when I want a harsher onion flavor, or if I'm cooking wild game and want to take some of the gaminess out of the meat.

Personally I prefer yellow or white onions for cooking. Red onions cooked take on a kinda ugly grey color.

Of course! Red onions are the only ones in our house! They're so much better than whites or yellows.
