Through the process of evolution.
Just like every other form of life on this planet. Everything on this planet is made up of the same basic chemicals and uses the same form of DNA. Everything is related at a basic level.
We all started out a a single cell, taking half our genetic information from our mother and half from our father.

Cosmology: Describes how the universe began.
Big Bang Theory: Describes how the Universe developed.
Abiogenesis: Describes how lifelessness gradually developed into life.
Evolution: Describes how life changed and adapted to the environment.

It is important to realize that humans are not 'at the apex' of evolution. We merely adapted to our particular environment. A bear is better able to survive in the woods than modern humans -- does that make the bear superior, or just better adapted? We're just one more step in a vast 3.5 billion year long process, and the process will continue long after the human race has changed or died.

Simply put, God can know of everything, but in order to experience everything, He had to create us, being part of Him, to realise things through us.
Knowing somthing and realising the same thing is quite different.
You can know the water is cold, but only when you touch it, you realise how cold it really is.

genesis1:26 And God went on to say: "Let us make man in our image, according to our likeness, and let them have in subjection the fish of the sea and the flying creatures of the heavens and the domestic animals and all the earth and every moving animal that is moving upon the earth." 27 And God proceeded to create the man in his image, in God's image he created him; male and female he created them. 28 Further, God blessed them and God said to them: "Be fruitful and become many and fill the earth and subdue it, and have in subjection the fish of the sea and the flying creatures of the heavens and every living creature that is moving upon the earth."
