White Chili
(serves 4-6)

Ingredients
1 1/2 pounds of skinless chicken breasts*
2 -14 ounce cans chicken broth
3 -14 ounce cans of white northern beans
1 -14 ounce can of white kidney beans
2 cups of chopped onions
2 tablespoons of chopped garlic
2 heaping teaspoons of cumin
2 heaping teaspoons of oregano
2 teaspoons of chili powder
1 teaspoon red pepper
2 tablespoons of olive oil


*Bake the chicken breasts at 350 degrees 30 minutes. Let them cool and cut or tear into bite size pieces. Add chicken to chicken stock mixture.

Directions
Combine chicken broth, white northern beans, white kidney beans, cumin, oregano, chili powder, red pepper, and hot sauce in a 6 quart stock pot.

Sauté garlic and onions in olive oil until tender. Add green chilies and sauté 2 more minutes. Add to other ingredients.

Cook for an hour and serve.

White Chili With Chicken

INGREDIENTS:
1 can cooking oil spray
1 tablespoon olive oil
1 pound boneless chicken breast; skin removed, cut in 1/2-inch pieces
1/4 cup chopped onion
3 cloves garlic, minced
1 can tomatillos (about 16 ounces), drained and cut up
1 can Ro-tel tomatoes, diced tomatoes with green chiles
1 can chicken broth (1 1/2 cups)
1 can (4 ounces) chopped green chile peppers, not drained
1/2 teaspoon dried oregano flakes
1/2 teaspoon coriander seeds, crushed
1/4 teaspoon ground cumin
2 cans great northern beans, drained
3 tablespoons lime juice
1/4 teaspoon black pepper
1/2 cup shredded sharp Cheddar cheese

PREPARATION:
Spray a large skillet with cooking spray, add olive oil and heat on medium high until hot. Add diced chicken and saute for 3 minutes or until done. Remove chicken from pan. Place all ingredients, except Cheese, in a crockpot and cook for 8 hours.
Top each serving with a little shredded cheese. Serve white chicken chili with tortilla chips, salsa, sour cream, and condiments of your choice. Serves 6 .

Delicious Creamy White Chili

This Recipe Won 2nd Place at the VA State Fair!

1 lb. boneless skinless chicken breast, cooked and cubed
1 medium onion
1 1/2 tsp. garlic powder (or fresh garlic is even better)
1 Tbls. Vegetable oil
2 (15 oz.) cans great northern beans, drained and rinsed
1 (14 1/2 oz.) can chicken broth
2 (4 oz.) can chopped green chilies (usually found in Mexican food section of the grocery store)
1 tsp. salt
1 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1 cup sour cream
1/2 cup whipping cream


In a large saucepan, saute chicken, onion and garlic powder in oil until chicken is no longer pink. Add beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Remove from heat; stir in sour cream and whipping cream. Serve immediately.
