I love this time of year, and would love recipes using apples, pumpkin, squashes, etc. Yes, I know there are a lot of them online, but I'd like to know your "tried and true" recipes, please. Thanks for sharing.

Yum! All of these look good. The pasta with pumpkin sauce is one I have never heard of before. Definitely going to try that this week!

We LOVE both of these!! I am actually making the pasta for dinner tonight!


Let me start by saying this doesn't really taste like pumpkin...it's just really good and creamy. It's not spicy either. It's very very good. I hope you try it!

Pasta with Creamy Pumpkin Sauce

1 pkg. (16 oz.) penne pasta, uncooked
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/2 cup (1 stick) butter or margarine
1/2 cup milk
1 cup canned pumpkin
1/2 tsp. ground red pepper
Ground nutmeg to taste

COOK pasta as directed on package.
MEANWHILE, place cream cheese, Parmesan cheese, butter and milk in large saucepan; cook on low heat until cream cheese is melted, stirring frequently. Add pumpkin and spices; cook until heated through, stirring occasionally.
ADD pasta; toss lightly. Serve topped with additional Parmesan cheese, if desired.

Roasted Squash and Asparagus

2 1 /2 pounds acorn and butternut squash (whatever kinds of squash are available), seeded and cut into 1/2-inch rings
2 teaspoons olive oil
Coarse grained salt and cracked black pepper
1 bunch asparagus, cleaned

Preheat oven to 450 degrees F.
Place squash rings in a plastic bag with olive oil, salt and pepper. Shake until well coated. Place on a baking sheet in a single layer. Cook, turning once until squash is softened and almost cooked through, about 25 minutes. About halfway through cooking, add the asparagus and continue roasting until all are tender.

My family loves for me to make Apple Dumplings....its my grandmothers recipe and its so good !!!!
using any pie crust recipe.....
I take some of the pie crust and roll it out into a Circle big enough to put a cored peeled apple in the center....then fill the apple with sugar...sprinkle with cinnamon...and nutmeg and top with a pat of butter/margarine. Fold the crust up and around the apple. Place in a baking pan. Do as many as you need. then after placing all the apples in the dish....take some brown sugar.....about 1 1/2 cups and mix with about 3 cups warm water....mix till sugar is dissolved...pour this over the apples.....place more pats of butter on each apple and bake for approximately 1 hour at 350*.....they should be nicely browned and the apples will be done. Serve warm with ice cream.......this is so GOOD !!!!!

I love squashes in autumn. Baked Acron squash is my favorite and so easy/simple its almost unbelieveable.
Cut squash in half, remove seeds, fill cavity with butter/margarine then sprinkle brown sugar over the tops. Place on a foil lined pan with the foil turned up to catch/hold the melted butter/sugar. Bake in the oven at 375 until a fork pierces with ease.
Baked apples can be done just about the same way.
Cut 'top' off apple like you are going to carve it like a pumpkin.
Scoop out the inside leaving at LEAST 1/4 shell/skin. Mix innards with sugar&cinnamon to taste. Stuff this back into the apple skin shell. Put a large dollop of butter on top, replace the apple 'tops' and bake on a foil lined pan (edges up) in a 375 degree oven until soft and kinda smooshy......

AUTUMN PORK CHOPS
6 pork chops
2 medium acorn squash, unpeeled
3/4 tsp. salt
2 tbs. melted butter or margarine
3/4 cup brown sugar, packed
3/4 tsp. brown bouquet sauce
1 tbs. orange juice
1/2 tsp. grated orange peel

Trim excess fat from chops. Cut each squash into 4-5 crosswise slices; remove seeds. Arrange 3 chops on bottom of crock pot. Place all squash slices on top; then another layer of remaining 3 chops. Combine salk, butter sugar, bouquet sauce, orange juice, and orange peel. Spoon over chops. Cover and cook on low for 4-6 hours or until done. Serve one or two slices of squash with each pork chop. Makes 6 servings.
