Ohio requires food service workers to use gloves whenever they are touching food that will not be cooked further while being prepared. Such as slicing raw onions to be used on sandwiches.

Also - making prepared foods that will not be cooked further, such as sandwiches, no-bake cookies, etc.

I am a Culinarian student, and we use gloves whenever there is a danger of cross-contamination. I believe this is part of the state law, too, but I'm not certain of that.

Hopefully not many. It is much cleaner to have them just wash their hands often. Those gloves have teeny holes for your hands to breathe. However, your hands sweat a lot wearing them and it can seep through on to your food. That's just nasty nasty...I'll cook and serve my own food thanks!

In Iowa I was only told to wear them when handling raw chicken or fish, and sandwiches. I guess it depends on where you work.
