Antipasto Platter
12 ounces roasted red peppers
12 ounces marinated button mushrooms (drained)
36 Italian olives or green olives, drained
36 black olives (drained)
24 pepperoncini peppers
8 ounces pepperoni, sliced
24 slices prosciutto, rolled
24 slices ham, rolled
48 slices genoa salami, rolled
12 ounces fresh mozzarella cheese, cubed
36 grape tomatoes or cherry tomatoes
Here's how:
Arrange ingredients on tray.
Serve with bread sticks or chunks of warmed Italian bread.
Have a small dish of olive oil on the side for dipping.

Yummy Spinach Lasagna
(even if you don't like spinach!)
Ingredients:
9 uncooked lasagna noodles
2 1/2 cups milk
1/4 cup flour
1 teaspoon garlic salt
2 packages (10-oz. size) frozen spinach, thawed, squeezed to drain
1 cup cottage cheese
1 1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Directions:
Cook lasagna noodles to desired doneness as directed on package. Drain; rinse with hot water.
Meanwhile, heat oven to 350F.
In medium saucepan, combine milk, flour and garlic salt; blend well. Cook over medium heat, stirring constantly, until mixture boils and thickens. Reserve 1/2 cup white sauce for top layer of lasagna; stir spinach into remaining sauce.
In medium bowl, combine cottage cheese and mozzarella. Spread 1/2 cup spinach sauce in bottom of ungreased 13x9-inch (3-quart) glass baking dish. Top with 1/3 of the lasagna noodles, half of cheese mixture and half of remaining spinach sauce; repeat layers. Top with last 1/3 of the noodles and reserved 1/2 cup white sauce. Sprinkle with Parmesan cheese.
Bake at 350F for 30 to 40 minutes or until thoroughly heated. Let stand 5 to 10 minutes before serving.
This freezes well too! Just thaw before baking.
This recipe serves 6 - to serve 12 make 2!

You must double any recipe that yields at least 6 servings.
The easiest and cheapest is always a spaghetti dish served with garlic bread and and salad.

Penne Pasta with Sgrimp, Artichokes and Sundried Tomatoes
2 lbs. of shrimp - peeled and deveined
2 (1lb.) boxes of penne
6 cloves of peeled garlic, thinly sliced
1/2 cup of julienned sun dried tomatoes
2 pkgs of frozen artichoke hearts, defrosted
1/4 cup of white wine
1/2 cup chopped flat-leaf parsley
1/4 cup of olive oil
1/2 stick of unsalted butter
salt
freshly ground black pepper.
Cook the pasta according to the package directions. While the pasta is boiling, heat olive oil and butter in a large skillet on medium-high heat. Add garlic and sautee until it starts to lightly brown (do not let it burn). Add shrimp .. when it begins to turn pink add the wine, artichokes and sundried tomatoes. Sautee until shrimp are cooked. Add the pasta and parsley. Mix everything together and serve.

You can make sloppy joes. Just brown the meat, add the sauce and serve on buns. Serve with potatoe chips.
Spaghetti is easy to make and can easily be served for 12 people.

You could do Chili..a big pot of hot chili and some cinnamon rolls. Or maybe a casserole or pasta. Spagetti is so simple and serves as many as you need. A couple boxes of spagetti and a couple jars of your favorite sauce, a simple salad and garlic bread. Good Luck !!!!
