what would go good with it, and is there anything much better than a roast so tender it falls apart?

Oven roasted potato, apple compote, peas.
Cut potatos into wedges coat with oil of your choice sprinkle with salt and pepper. Place spuds on a cookie sheet skin side down - roast until golden brown (time will depend on the size of the wedges.

Peel and core an apple or two ( half an apple per person should suffice. Cut apple into half inch chunks put in a sauce pot with a litttle water (and if you have some white wine) add a little brown sugar and boil until apples are soft, add some raisins and cinnamon serve as a side.

Peas just fresh peas.

A nice three bean salad and cornbread. Roasted red potatos would be nice too. Falling apart tender eh? Sounds scrumptious! Use Robert's recipe for the potato.

Fried potatoes and corn goes well with it. The only thing that could be better is adding bbq sauce to it.

Cheesy taters, like scalloped or cheesy hashbrowns. And a nice garden salad.
