Coat the roast with good quality olive oil then rub dried hebs - thyme, rosemary, marjoran or oregano, salt, pepper place the roast on a rack in a roasting - pour a little water (about one inch) into the pan roast at 20 to 25 minutes per pound at 350F. Rotate the roasting pan every 30 minutes or so to get ensure thorough cooking. Check for internal temp (should be somewhere near 165F take roast out of oven cover with foil and let rest for 10 minutes (the roast will continue to cook and bring the temp up to 170F. This insures a moist flavorful roast.

Hi jstlttllm,

I usually make a rub with:
garlic powder, onion salt, pepper rub this all over pork roast, brown on top of stove,
then add to pan about 1/2-1 cup water,
Cover with aluminum foil,
Bake 350 degrees, 3-4 hours until white in the middle,
makes really good gravy.
or
Marinate: 1 clove or 1 Tablespoon (the kind in jar) fresh garlic,
1 cup soy sauce (can be lite soy too),
1 cup pineapple juice,(save the rest of the juice & pineapple),
1 1/2 teaspoon dried mustard,
then put this all in baggie marinate & turning often & leave overnight,
Discard then the marinate,
Bake 350 degree oven,
covered, bake 1-2 1/2 hours, 1/2 cup water this should cook down before you add the juice & pineapple (you don't have to use the pineapple but this seems to compliment the roast) or use as a side for the meal,
1/2 hour before you take the roast out use the pineapple & the rest of juice over the top (like a nice brown glaze),
Bake uncovered you just want to make sure it's done before you take it out,
so cut make sure white inside (done).
Good for gravy but add a dash of hot sauce cuts sweet taste & gives it alittle kick.
Yummy! Have a good day!

Teriyaki marinade

one quarter cup cooking oil
one quarter cup soy sauce
one quarter cup dry sherry
1 tsp ground ginger
1 clove garlic, minced
2 tablespoons molasses

Combine first five ingredients
Place beef, pork or chicken in a plastic bag set in a deep bowl
Pour marinade over meat and close bag
Chill anywhere from 4 to 12 hours, turing bag occasionally to coat meat evenly
Drain meat, reserving marinade
Stir molasses into marinade and use it to baste meat during the last 10 minutes of roasting or grilling
you would need to double this recipe for a 5# roast

Cooking your pork loin

This is what I do.I put mine in a crock pot.I have never had one this big but you could cut it in half so it will fit.I sprinkle mine with salt and pepper, garlic, and a dry barbegue seasoning. And cooked it on high for about 6 hours.I have never had to marinate it before hand because the crock pot keeps the moisture in.I have also added potatoes and a pork gravy packet in the bottom of the pot with a little water and put the roast on top.this makes a good gravy. And if you are home you can baste it from time to time.If your worried about if it is done get a good meat thermometer it should have the correct temps for all cuts of meat on the thermometer.I have also heard 15 minutes for every pound of meat. But with pork you have to be safe.Good luck.

The most important step in cooking any port, especially a pork loin roast is to soak it in a brine for a few hours first. Pork tends to dry out during cooking. A brine keeps it moist during the cooking process. A brine consists of water, kosher salt, blackpepper corns, brown sugar, apple juice, thyme. You can pretty much add any spice to the brine. The main components should be water, salt, brown sugar. Cooking varies and you should check some recipes at http://www.foodnetwork.com. But soaking in a brine is the most important step.
