I have a wonderful fresh ripe mango and want to make mango lassi. I found a recipe that says to use 2 cups fresh curds... I live in Germany, and am not sure where to find curds, what should I use instead? Thanks!

no need to go shop for curd. Collect milk and boil it to thiken little. when the milk is luke warm add little sour(tamarind/viniger/lemon) to it . Keep it in dry place for 3 to 6 hours(depending on weather, hot season needs less time). You will get your curd ready to eat or to make lassi.when u r making lassi add 2 -3 spoons sugar and a pinch of salt

You can create good curds by using a little fermenting yeast in warmed and cooled milk. Your mango can comfortably sit in the cold storage till then. It takes from six to twelve hours for the curds to form, depending on the ambient temperature. The warmer the quicker. Good Luck!
There is no good substitute for Curds to make Lassi.

U should import lassi from india or try to make curds, b'coz for lassi there is no alternative for curds.

You can make curd by adding one teaspoon of lemon juice to warm milk and leaving it overnight
