because it lies in the field of their study. it's a unique geological formation that no archeologist can miss. it's like asking why biologists find wildlife so interesting..

If you go back thousands of years, there were no houses, no malls, no shopping centres, no cinemas so humans or their ancestors had to make do with whatever was available. In fact, caves were probably the first homes where they lived, worked and played. They used them for sleeping, cooking, painting and making things. From the wall paintings, archaeologists can tell what the area looked like, what colours were available and possibly the IQ of the people of the time. Tools that they used will show how advanced the inhabitants were and the bone remains can tell what food they ate and what was plentiful at the time. Graves are also found and many things can be told from those. Did ancient mankind treat their dead relatives with dignity and some reverence. An interesting point that can be told from the same source is did they believe in a life hereafter. If some riches such as jewellery, cooking pots, food etc., are included in the grave, this gives a very good indication of this fact. There are wonderful things to be found in any ancient home. Just imagine, in fifty thousand years time, a future archaeologist may well be digging around your home and finding the things that you valued, how you thought, what you did and what direction mankind was going....................

yeah what actual cave are we speaking about here lol?
Probably because they don't simply see them as a just a cave. There are many things to observe, study and find out about anything, caves are just one thing to study.
Some people just find the little details about them particularly interesting, it's not anything really special, it's really just a personal preference.
